Yesterday evenings 5 course blind tasting menu set a new high for my visit to New Orleans, because it was just incredibly good. First off: Duck liver mousse - incredibly subtle an smooth with some peaches and miso to counter it nicely. I can’t recall the exact name of the bread, but with its nuttiness it acted as a perfect counterpart to the duck and fruit. Then a soft boiled egg with some heirloom tomatoes and crabmeat in a mushroom stock. For this dish the wine was a Pinot Gris from Oregon, with a nice, uncommon acidity to it. Then two perfectly grilled head and tail on shrimp over some pecan romanesco with horseradish gremolata. Accompanied by an Elderton E-Series Chardonnay from the Borossa Valley in Australia. No wood, so nicely balanced and also subtle. Then the speckled trout with crawfish and fennel sausage in a spring vegetable broth, the wine for this dish was a Pinot noir again from Oregon. Light bodied, yet enough Charakter to stand up to the very savory dish. For the next dish I had to teach the sommelier a new word, because it was simply „anbetungswürdig“: Smoked Beef Short rib with again heirloom tomatoes, an English peas mousse and some fava beans. This dish needs a powerful wine, and the Double Canyon Cabernet Sauvignon was exactly that. Then a very nice and tasty olive oil sorbet on a little bit of lime/lemon and with a little sea salt. And lastly the dessert - again perfect: red velvet cake and strawberry shortbread with white chocolate mousse, normal chocolate and raspberry mousse drops and also what I believe to have been a gin jelly. Really extraordinary. This came with a glass of Niepoort Tawny port. All in all an extraordinary dining experience. One of my favorite childhood classic dishes that my mom used to make is steamed pork belly with preserved mustard greens. Well, it's almost summer here and I'd like a better beach body. 😉😝😜I made a "lighter" version with short ribs. It was delish! 😋😋😋
⠀⠀⠀⠀⠀⠀⠀⠀⠀
50 g dried reserved mustard greens
1 pound of pork short ribs
2 tbsp light soy sauce
2 tbsp dark soy sauce
2 Shaoxing cooking wind
2 garlic minced
1 tbsp rice vinegar
1 tsp ginger minced
salt to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Soak mustard greens in warm water for a couple of hours until all soft - Put all other ingredients in a bowl and marinate the meat for a couple hours covered in the fridge - Drain mustard greens and place on top of the pork. Place the work into a pressure cooker/instant pot and steam for 40-50 mins. - Serve over rice

BBQ’d on @traegergrills #timberline850 for almost 12 hours Low & Slow! #supersmoked up to 4 hours at 165 1st 2 hours and 225 the following 2 then upped temp to 250 for the rest of the bbq using #traegergrills #pecanpellets •••••••••••••••••••••••••••••••••••••••••••••••••••• Was kind of shocked how fast it got up to 150+ I even reached out to @freedomsohard to help walk me off the ledge. He suggested double checking with a different meat thermometer and make sure probe wasn’t too close to bone. Ultimately it just hadn’t started to stall which it did soon afterwards!
