Shorshe Maach Recipe
Serves: 4
Cook Time: 25 minutes
Ingredients:
Engine Kacchi Ghani Mustard oil – 3 tablespoon
Kalonji or Kala zeera - 1/2 teaspoon
Green chili - 4
Fish pieces (Aar, Katla or Rohu) - 8
Salt – 2 teaspoon
Mustard powder or Mustard paste – 3 tablespoon
Instructions:
1. Marinate the fish pieces with salt and turmeric powder
2. Soak mustard powder in 1½ cup of water with little salt for 5-10 minutes. Mix it well.
3. Heat oil in a deep pan. Fry the fish in oil and keep in a dish
4. In the remaining hot oil, add Kalonji and let it fry for 20-30 seconds. Add the mustard paste and 1½ tea spoon turmeric powder, cook for 2-3 minutes.
5. Add 1 cup of water. Add salt to taste and half-cut green chili (3-4). Cook the gravy in low flame for 3-4 minutes. Add the fried fishes. Cover the pan and cook for 4-5 minutes.
6. Serve Hot with Bhaat (Rice)
7. Enjoy

Dinner tonight: sea bass in mustard - the closest I've been able to get to the traditional shorshe ilish without using actual ilish. Mustard is a traditional favourite in Odia/Bengali kitchens. As is coconut. And when you combine both, the result is always magical, especially when you are trying to whip up a fish curry. Wish to take it to another level? Blend those two ingredients with a fistful of poppy seeds, which, again, is central to Odia/Bengali cooking. That's how I made my SORISO PAABDA (Butterfish in mustard gravy) for today's lunch

Just so that you don't end up with a bitter tasting gravy, be careful with the amount of mustard seeds you use

For four Paabda pieces, I ground 1tbsp each of black and yellow mustard seeds with one cup of coconut, 5 green chillies, 1/2 cup poppy seeds and a pinch of salt. I put some mustard oil in a hot pan, added kala jeera (nigella seeds; waited for it to crackle) followed by the paste. When the raw smell disappeared, I added three cups of lukewarm water, chopped coriander leaves, four slit green chillies and salt to taste. Then I slid the shallow fried pabda pieces into the gravy, let it boil for 5 minutes and ta-da! Yummy SORISO PAABDA was ready to be relished!

Ingredients
• 2-3 piece of Maach (Fish) – Rui Maach
• 1 tbs black mustard
• 1 tbs yellow mustard
• 3-4 green chillies
• 1 tbs yogurt
• 1 tsp turmeric powder
• 4 tbs mustard oil
• Salt to taste
Method:
1. Prepare mustard paste made with kinds of mustard (black and yellow), 2 green chillies and salt.
2. Take a microwavable dish. Place the fish. Apply salt, turmeric, mustard paste, yogurt on both the sides of fish. Add mustard oil and green chillies.
3. Cover it with a cling film. Microwave for 3 minutes.
4. Serve hot with Rice.
