With all the cheesy, flakey, creamy goodness coming our way this holiday, it’s nice to have a “guilt free” low carb alternative on the table, well this is your go to👉🏻 PESTO ALFREDO ZOODLES! Creamy and delicious, yet still Waist line friendly...ish😉 recipe below! 👇🏻 3 zucchini’s
2 tbs. butter
2 garlic cloves minced
1 pt. Heavy cream
3 large tbs. Fresh pesto (or 4 cubes frozen chopped basil)
1/2 cup Parmesan cheese
1/2 mozzarella cheese
Dash of salt (adding Parmesan so don’t want too salty)
Dash of fresh cracked black
Start by spiraling the 3 zucchini’s, then
In a small sauce pot, melt butter over medium heat and add pressed garlic.
Sauté until fragrant (just a few seconds) and slowly add heavy cream WHILE whisking. Heat through on medium heat, keep stirring slowly. Then add sautéed onions and mushrooms,
Parmesan cheese,mozzarella, salt and pepper. Keep cooking on medium-low heat for about 5-7 minutes, stirring often, until all smooth, add pesto and mix well. Then add spiraled zucchini and mix in. Don’t keep on fire for too long or zucchini will start letting out a lot of water. Top each plate with some fresh grated Parmesan cheese.
