simone’s lemongrass pork bahn mi
was suppose to do lemongrass mince pork skewers but changed my mind so here’s a lemongrass twist to toasty Vietnamese bahn mi
what you need
-1 toasted baguette -butter -red cabbage
-1 carrot -1/2 white onion
-handful parsley -handful chopped spring onion -1/2 japanese cucumber
-1 tablespoon canola oil (meat)
-2 medium pork shoulder fillets
-3 bruised lemongrass stalks
-11/2 tablespoons soy sauce
-1 tablespoon mirin
-1 tablespoon fish sauce -1/2 tablespoon sugar
-pinch of salt
1.marinate meat with ingredients and set aside for a couple of hours. when ready to cook, add canola oil in a pan and fry, start with the fillets - cut them into thin strips, add the lemongrass and end off with drizzling all the marinate in.
2.toast baguettes with butter and set aside.
3.cut all your other ingredients.
4.after the baguettes are ready,dress it up - add all your toppings and viola!
5.pour all remaining marinate on top and serve with chilli/tomato sauce.
