Days 1&2 of the #engine2diet #sevendayrescue Challenge. These were the breakfasts and dinners we've had so far (completely forgot to take the pics at lunch). The meals take time to prep but they have been worth it. Oh, and did I mention the family was in on this to support me? I was worried that my kids and husband would be against it but my son and husband have said they'd actually consider eating plant-based from now on if the meals tasted this good! My daughter...not so muchπŸ˜‚πŸ˜‰

Bam!! The folks at @engine2diet and @dr_esselstyn are always promoting "Eat your greens with breakfast!" Sometimes I do and sometimes I don't. Today was a "DO" day!! πŸ‘Š Savory breakfasts can be SO good!
Instant Pot Recipe:
🌱 1 cup GF steel cut oats
🌱 2 cups low sodium veggie broth
🌱 1 cup water
🌱 1/3 cup nutritional yeast 🌱 1 tsp Garlic powder and Onion Powder
🌱 1/2 tsp Turmeric
Set to manual for 4 minutes. Natural release. When done add handfuls of spinach (or any green you like) and stir until wilted and mixed.
Top with a dollop of salsa if you like. 🌿
