Can't believe yesterday was day 6 of the Engine 2 Seven Day Rescue challenge!
B: banana. Yes! Only a banana. Went to a footrace, so needed something light.
S1: apple slices.
L: huge amazing post race salad! 🥗 Got the dressing on the side and then used lemon wedges instead. Garbanzo beans, beets, diced tomato, radishes, cucumber slices, avocado, sunflower seeds, and yummy toasted rustic bread on the side.
S2: pickle plate! Red onion, radish, and chayote squash.
D: my cookbook club made food out of Hartwood - sweet potatoes roasted in camomile with toasted pumpkin seeds, avocado soup with cabbage slaw, roasted plantains, grapefruit and cucumber salad. Amazing! (The rest of group had tuna and chicken, but I'm vegetarian so not for me 😉). #Macros: 58C/33F/9P. Lots of avocado brought the fat up but it was good!
