Can't believe yesterday was day 6 of the Engine 2 Seven Day Rescue challenge!

B: banana. Yes! Only a banana. Went to a footrace, so needed something light.
S1: apple slices.
L: huge amazing post race salad! 🥗 Got the dressing on the side and then used lemon wedges instead. Garbanzo beans, beets, diced tomato, radishes, cucumber slices, avocado, sunflower seeds, and yummy toasted rustic bread on the side.
S2: pickle plate! Red onion, radish, and chayote squash.
D: my cookbook club made food out of Hartwood - sweet potatoes roasted in camomile with toasted pumpkin seeds, avocado soup with cabbage slaw, roasted plantains, grapefruit and cucumber salad. Amazing! (The rest of group had tuna and chicken, but I'm vegetarian so not for me 😉). #Macros: 58C/33F/9P. Lots of avocado brought the fat up but it was good!

Day four of the Engine 2 Seven Day Rescue Challenge. More than halfway through now! Today was a little more challenging since I was out twice so I needed to find the menu item that was the closest to the challenge guidelines.
B: Coffee shop - #avocadotoast toast with arugula, radishes, cherry tomatoes, and a cup of black tea with almond milk.
S1: kiwi.
L: polenta topped with leftover black bean, tomatoes, and spices mixture.
S2: Granny Smith apple with cinnamon.
D: Pizzeria #brewery - three grain salad with quinoa, farro, barley, on kale with golden raisins with dressing on side. Yes, I was the person at a #pizzeria brewery having a salad and sparkling water. 😐 It was all good though!

Day three of the Engine 2 Seven Day Rescue Challenge! Carbs and starches are the basis for this challenge and I'm not hating that at all.
B: Savory #polenta made with almond milk, nutritional yeast, and corn served on top of spinach and topped with fire roasted tomatoes and mushrooms.
S1: cherries.
L: Baked sweet potato loaded with black beans, red onion, tomatoes, and tons of spices and herbs.
S2: tangerine and a few blueberries.
D: brown rice, pinto beans with red onion, steamed broccoli, topped with pico de gallo #salsa.

Day two of the Engine 2 Seven Day Rescue Challenge. Feeling well nourished! My #vegan hubby is happy and my kid is digging it too. Lunch today was a bit sketch bc I was out and about, but I did my best.
B: shredded wheat with banana, strawberries, cinnamon, and unsweetened almond milk.
S1: kiwi and frozen pineapple chunks with a sprinkle of #tajín.
L: smashed avocado with za'taar spices on rustic bread. This is more avocado than the plan calls for, but it was the only thing close to compliant where I was.
S2: cherries and dehydrated mandarin orange slices. SO good. Probably too good 😊. D: brown rice, pinto beans with red onion, no oil roasted cauliflower, bell pepper strips, and rainbow carrots on a bed of spinach and romaine, topped with pico de gallo #salsa.

Vacation weekend.....success!! I feel unstoppable!! I feel like I should run through the neighborhood yelling "You should do this!!"( I could put my Engine 2 tshirt on.Hmmmm😊) Post vacation, in the past, sugar and I would do a tug of war. That voice would talk me into all sorts of food and drink shenanigans. Then I would go home feeling wreaked emotionally, because shame and disappointment would take over. And they suck!! Not this time!! My Engine 2 brain and I had a vacation together and we rocked it✌✌✌✌ I am so proud and my hubby is so proud too. It feels pretty friggin good!! I can confidently say I GOT THIS!!! I CAN DO THIS!!! SUGAR YOU DON'T OWN ME ANYMORE!!! Fruits and veggies it's your time to shine.🍊🍋🍌🍍🍓🌶🌽 Today I am taking some time to figure out where I want to build! Where am I going next?
