Oh My Goodness Bowl - fill your bowl with baby spinach. Top with: smoked paprika roasted potatoes, chickpea scramble (one can chickpeas drained and mixed in a food processor with 1/2 cup cornmeal, 1/2 cup unsweetened almond milk and a teaspoon of low sodium or no salt added taco seasoning blend - sauté like you would scrambled eggs - in a dry nonstick pan until firm) - top with a ceviche slaw (we used a lemon balsamic, a little cayenne and black pepper with a squeeze of lime juice), serve with black beans, avocado and hot pickled carrots 🥕 if you can! Oh and a drizzle of sriracha for good measure. Now go tackle your day! #sevendayrescue
