My favorite thing to eat for dinner... Breakfast! 😍 my dad is one heck of a cook. This may look like a lot of calories but I added it all up and it came out to about 700 calories (I try to stay between 400-600 for dinner) for everything which isn't too bad at all (not pictured was my wheat toast which I probably could have did without). My dad uses spray oils to cook which are 0 calories and he used a little butter in the potatoes. Pictured is 2 scrambled eggs with a little cheese, a 4 oz piece of scrapple, 3 slices of bacon, and 1 medium red potato. And I ate everything because the only other thing I've had today was chilia small bowl of chili for lunch (I know I know 3 meals a day but I was really busy this morning and forgot to eat). However, this meal was PACKED with protein which was good.

America! The Stuffed Bell Peppers from #ComeAndGetIt are SO GREAT!!! You can EASILY make them super clean by leaving out the cheese and swapping out the rice for riced broccoli (pictured 🙌🏻).
Full disclosure: I added a jalapeño, 2 extra cloves of garlic and a HEARTY amount of seasoning: salt, pepper, cumin, chili powder and Montreal Steak. I seasoned the filling at each step, this dish needs it but the payoff is GREAT!! The prep time was lengthy, due to all the chopping, but the baking time let me completely clean my kitchen, so it worked out!
