Folks, I think this has just become my favourite chicken dish ever.
I know. I didn't see it coming either, considering I'm not an especially big fan of Vietnamese cuisine, which I find too sweet and delicate.
To be honest, I only became interested in this lemongrass chicken because I have lemongrass I don't know what to do with. After watching it on Korean (I know, the irony) youtuber Seonkyoung Longest's channel, I thought it wouldn't be too difficult to make.
The funny thing about cooking is, after a while, you *know* a dish will be good even just looking at it. Even without taste testing, I knew, seeing the outer crust of the chicken caramelising as it bubbled in the sugar, fish sauce and oyster sauce bath, and my nostrils tickling as the piquant fragrance of lemongrass, chilli garlic and onion filled the air. .. I knew this was going to be good.
This is definitely going into that recipe book :P
P.S. If the lemongrass looks a bit hard, that's because it is. I was basically making this to use up very old, dried up, stiff as cardboard lemongrass, which was very hard to chop finely. Still, it gave off amazing flavour. I'm just happy to find a new way to use lemongrass other than in curries!
