Tuesday evening, I am sitting at my dining table with my laptop while staring at the steady rains from my floor to ceiling balcony, time is passing quickly. I can't believe its already been more than a week since the last curated food experience, so much prep, so much work and so much time spent on it and now I like the calm.
The dishes that I created, all need to be made with time, as someone said sometimes the best ingredient for cooking a fabulous dish is time. The dishes were developed with time, were cooked with time, each dish had several elements- all put together only while serving to the guests. And most amazingly were borrowed & inspired from a time gone by- in this case my best summers of childhood and past.
A Musk melon Gazpacho (a cold soup)
The Inspiration: The juicy sweet fruit that I had endlessly in hot summers , and the muskmelon milk shakes that Ma made
The Adaptation: Adapted with my own ingredients and method from a similar watermelon gazpacho I had tasted at Villa Shanti (a boutique hotel & restaurant in Pondicherry)
The result: A cold Musk Melon Gazpacho with mint and chillies made the night before and chilled in the fridge overnight. Simple, cool, summer all the way.... A tid-bit: Summers are so hot in so many parts of our country, why not have more cold soups?
