Dinner from last week (almost caught up!)
Pesto Lamb chops.
Lamb chops were cast-iron skillet seared then finished in the oven, after being dry rubbed with rosemary, salt and pepper and topped with some basil. Served over farfalle (it looked more appetizing after I mixed it with the pesto but forgot to take that picture), roasted mushrooms and tomatoes (cooked with the lamb). The pesto was made with basil, red kale, lemon juice, garlic, evoo, shredded espresso parmesan cheese and my secret ingredient, toasted pistachio nuts! This dish was amazing, and amazing and a success, and amazing. My fiancée always is displeased when food has a bone in it, but she didn't seem to mind for the lamb chop, either! The pesto, again, the star of the dish as it brought together all of the flavors and was magic #pesto.
