By day? I'm a pretty decent baker. By night? I'm a really awesome cook!! You see, I feed the elderly ... roughly sixty folks. Most are widowed and alone. They love strolling to the kitchen to speak with the cook. Even though I must follow the ACA guidelines, and their specific diets, I do my best to give them really good food. It's hectic, and time-consuming. I make one meal, four different ways to accommodate four different diets. It's humbling, but it's making me a better cook. I treat their food the way I treat my food: with respect. If I won't eat it, then I won't serve it. It's cool.
