Here it is! The long awaited vegan gingerbread scones with vegan chia jam and vegan whipped cream 🙊🌱 all vegan homemade er'thaanng 💛✨
Ingredients for the scones:
250g plain flour
2 tbsp coconut sugar (/any sugar will work fine)
1 tsp baking powder
Pinch of salt
60g dairy-free spread (I used Pure)
6 drops of @fitmart_de gingerbread flavour drops #sponsored
75g plain soy yoghurt
60ml unsweetened dairy-free milk of choice
A few big handfuls of frozen berries (I used raspberries, cherries and blackberries)
2 tbsp coconut sugar
6 tbsp chia seeds
1 tbsp corn flour
1 can full fat coconut milk
About 1/2 cup icing sugar
Pre-heat oven to fan 180°C/350°F.
Combine the flour, sugar, baking powder and salt.
Rub in the dairy-free spread using your fingertips.
Mix in the flavour drops, yoghurt and milk until combined and you have a dough.
Flour a work surface and tip the dough out onto it.
Roll out the dough until it's just under 1 inch thick.
Cut out the scones using a round cookie cutter.
Place the scones on a greased baking tray.
Brush a bit of milk on the top of each scone and bake them in the oven for 20 mins or until golden on top.
Whilst the scones are in the oven, make the chia jam and the cream.
Heat the frozen berries in a small pan along with 150ml water. Once they've defrosted and the water is starting to boil, add the chia seeds and stir continuously.
Mix the cornflour with 1 tbsp water and add this to the jam mixture in the pan. Stir until fully combined.
Remove the pan from the heat and leave the jam to cool and thicken (the chia seeds will expand).
To make the cream, carefully open the coconut milk tin. Take out the cream that's separated from the liquid on top, without mixing the two together and put the cream into a bowl. Keep the liquid to put into smoothies or curries.
Sieve the icing sugar into the cream and whisk together until thickened.
Take the scones out of the oven once cooked and cut them in half to add the cream and the jam. Devour 😂😍
Keep any extra jam sealed in a glass jar in the fridge - do the same with the cream.
