My coworker feed my #tostones obsession every once in a while! 🤤🌱

Sautéed mushrooms and sweet peppers were the highlight of this salad! I had my regular ingredients and was about to prepare a quick salad but I was feeling uninspired and needed to add a twist to make something different. I chopped some romaine and other veggies but decided to sautée the sliced mushroom and sliced peppers in a little avocado oil with some coriander seeds. Once they were slightly browned, I added them to my romaine with some black olives, fresh cherry tomatoes, and some toasted pistachios. Added a touch of olive oil to the salad with some balsamic vinegar and I got to eat a delicious lunch!! *

Champignons et poivrons sautés sur lit de laitue romaine! Une bonne façon d’ajouter du “punch” à une salade, est de combiner légumes crus et cuits. Mon intention n’était pas de cuire mes légumes pour ce repas mais en le préparant, je n’étais pas inspirée et ça me tentait plus ou moins. Finalement, j’ai pris 5 minutes pour faire sauter les champignons et les poivrons dans de l’huile d’avocat avec des graines de coriandre et je les ai ajouté touts chauds à cette salade froide. Finalement, olives, pistaches grillées et tomates cerises avec une touche d’huile d’olive et de vinaigre balsamique ont complété cette salade qui fut tout à fait différente et délicieuse!

We celebrated my daughter's 21st birthday with a family dinner last night. It was pretty great.
I'm thankful for the leftovers this morning. 1) I woke up really hungry. 2) I'm flying to Montana later today to be with my mom as she battles cancer. My eating schedule needs to be changed around a bit, causing me to eat early in the morning 3) I'm using food as a distraction from the anxiety that is looming over my head.
I heated up the meat and veggies in a generous serving of butter and olive oil to meet my macros.
