Gujarati Kobi Marcha no Sambharo ( Cabbage and Capsicum Stir Fry ) that I made to go with our Daal-Chawal lunch on Sunday!
It takes a few minutes to chop the vegetables, a few more to get the tempering of peanut oil, crushed methi seeds and mustard seeds going and another one or two to barely cook the vegetables. So it is easily a frequent accompaniment to meals. I didn't have carrot yesterday or they would have gone into this along with cabbage, capsicum and onion. If you want a pop of color, use red or yellow capsicums instead. While most of the base ingredients remain Gujarati, a few curry leaves and a teaspoon of Urad Daal have snuck into the tempering just the way I have grown to love the city I call home ❤️! #sambharo #gujaraticuisine #gujaratifood
