The rising tide means the water is pouring in from the Atlantic and already being filtered by the sand banks, natural and cultivated mussel beds along the #Menai
I think I'll do as the worlds top salt experts at #halenmon do and filter this first with sand then activated charcoal (they actually go a little bit further than that before using it, but im really keen to make some #totallyraw #totallyanglsey #totallywild sea water brine ferments. Asap.

Its not only educational but the development that theyve done with such a simple basic product is astounding.
The ethics and thought that have gone into everything they do shows a real love and respect for the product and the environment.
#halenmon is now definitelty my favourite type of salt.
The carbon footprint is low and the end result are pure and clean beautiful salt crystals.
The smoked salt they produce takes some beating but if you (like me) enjoy smokey flavours they also make a smoked water that they started producing after a request from #Hestonblumenthal no less! Who is just one of their many michelin star chef customers.
The tour itself is really cheap (around £5) but its totally worth it.
The only 'problem' is its an 'exit through the gift shop' type deal but with so many inspired and inspiring ingredients for sale. Its impossible to leave without taking a few souveniers and well worth visiting the shop even if youre not doing the tour.
You can tell the staff love working here too.
