Ever heard of salsify? It's what the Dutch call 'schorseneren'. This is 'mammoth salsify', a heirloom variety that doesn't produce mammoth size roots (😉), but still delicious. I have grown them from seeds but it took 9 months before ready to harvest. I have grated them, sauteed in butter, then transformed into these salsify fritters with chilli, garlic and coriander.
