The first time I had these delicate aniseed gorditas was in a hot april sunday, right outside the courtyard of St. Cristobal's church. I remember licking the thick "rancho" cream and savouring the sweet and moreish dough.
Wehen I was a child my grandad would take us to visit old fishing towns along the coast in Veracruz, I particularly remember the town of Tlacotalpan where time seemed to have frozen and its colourful colonial houses seemed indifferent to modern times, everytime I make these gorditas it takes me back to those innocent days.
