Root vegetables-celery root, parsley root, carrot, kohlrabi and green parsley are the basic ingredients for the best vegetable, chicken, or meat soups and stews. However, I have not seen any soups around here being prepared with these ingredients in restaurants or by Food Channel chefs. Too bad! These simple root vegetables add very special, basic taste to every meal and enhance its taste!

Oh my god!!! Flavour explosion 🎉 I've been very careful with spices on my food for the last few years but tonight I've put some curry powder, ground cumin, salt, pepper and a little bit of fresh garlic on some carrots, parsnips and sweet potatoes (favourable veg for vata aggravation) and roasted them in some raw and full of flavour coconut oil. Now I just hope my stomach will cope with this which means that would be a very regular dish 😍 it's very warming and just what was needed in this rainy weather ❤️.

What can I say? I have had hash on my mind for dayssss 🤷🏽‍♀️I went on a weekend getaway with my friends and both mornings we went to the same diner, and both mornings someone ordered hash ✌🏼apparently this place knew how to do it!

Now I'm not going to tell you about how to order healthier when you're out to eat (but I could give you some tips if you're interested! Lemme know below 👇🏼), but I am going to tell you how to make something similar, and significantly healthier, in your own kitchen 😁 but first: WHY?
Well, they're quick, easy, filling, and a great way to clean out your fridge of veggie scraps! 🙌🏼In a diner, though, you're getting potato and a LOT of oil, not to mention all of the add ins also smothered in oil - or butter for that matter! Now I love potatoes and see the benefit in eating them regularly, whole starches are great! (More on that another time 💁🏽) but eat them restaurant-style and you can be taking in anywhere from 150 calories (1 McDonalds hash brown) to upwards of 400 (local restaurant count) - just for one side! ☝🏼so lets swap to the kitchen... Hash makes a great meal if done right - add veggies, a protein source, maybe some hot sauce and you've got yourself a plate of yum! 👅 in my case, dreaming of my friends' hash the past few days, I decided to put a spin on it. I didn't have potatoes to work with, but I did have leftover turnip carrot mash from last night (see, the earlier carrot emoji works 💁🏽) In a skillet with 1 tsp of oil: 1/2 c turnip and carrot mash + broccoli stems thinly sliced + sweet corn 🌽 + red bell pepper + tomato 🍅. I was too hangry to let it get crispy, but it definitely would have! Topped that with an egg and a sprinkle of nutritional yeast and I had a complete "hash" meal 🍳 this easily could have been done with frozen hash browns (potato should be the only ingredient) or freshly shredded potato 🥔
Side note: when you're out for breakfast and you reallyyy want that hash, go for it - and go for it mindfully, because balance 💙
