Sweet potato congee is perfect for when you're feeling sick, or in my case, pregnant, and needing some easy eating comfort food that's not greasy, salty, or heavy. Restaurant congee is savory and flavorful whereas this congee is an oddly delicious bland, that you season as you eat with garnishes like sweet and savory pork floss, salted duck egg yolk (my fav!), Chinese fried peanuts, and any variety of Chinese jarred pickles.
1/2 cup rice
6 cups water
1 1/2 cups sweet potato, peeled and cut in 1/2 inch cubes (1 small or half of a large sweet potato)
Salted oil fried peanuts
Salted duck egg
Chinese preserved vegetables or pickles
1. Rinse rice and add water to a pot.
2. Bring to boil and turn down to low.
3. Simmer covered for 30 min. Add sweet potato and simmer another 30 min.
