Did anyone LOOOOVe scotcheroos when they were little?!! 😍these were my fav desserts and i’ve been dying to find way to make them healthier, so I finally experimented.
SOOO I made some refined sugar free, “healthier” scotcheroos and they are drool worthy 🤤
🍫2 cups brown rice crisps
🍫1 cup oats
🍫1/4 cup pure maple syrup
🍫1/2 cup organic peanut butter
🍫6-8 large medjool dates
🍫1/2 cup vegan dark chocolate chips
Mix brown rice crips and oats together. Pit the dates, and blend in a high powered blender with a tablespoon of water until it becomes a paste. Set aside.
Add maple syrup to a pan over medium heat. When hot, add peanut butter and mix together. Add a little water if necessary. When thoroughly mixed, add the hot mixture to the brown rice crips and oats, along with the date paste, and mix well. Add mixture to the bottom of a pan or tray and push down to compact the mixture together.
Add chocolate chips and a generous scoop of peanut butter to a microwave safe bowl. Heat for 30 seconds, stir, and then for another 30. Add melted chocolate mixture to the top of the rice crispies. Let sit in a the fridge until set. Cut into squares and ENJOY!! 😋
