Apparently yesterday was #NationalSweetPotatoDay! How could I miss such a holiday? ⠀

Whilst I'm not a fan of National Donut Day or National Pizza Day, National Sweet Potato Day is definietly one I can get behind! ⠀

Sweet potatoes are one of my top ten foods healthy foods, and are one of the complex carbohydrates I recommend to my clients on the regular. They are packed full of fibre, micronutrients, vitamin A (essential for skin health), and I love to use them as part of my gut healing protocol. ⠀

When cooked and then frozen, sweet potatoes turn into a form of resistance starch, the prebiotic fibre that feeds the bacteria in our gut, ensuring a healthy and robust microbiome (the population of bacteria in our digestive system, responsible for everything from mood, cognitive function, energy levels, body composition, food cravings and more). ⠀

Simply cook the sweet potatoes (my @instantpotoffical is perfect for this), cool, peel, and then warp and freeze in amounts of about 1/2 a cup.⠀

My favourite way to add this form of resistance starch into my diet is in one of my Superfood Smoothies, and yes, whilst this recipe is amazing for blood sugar and hormone balance, and gut and skin health (blah blah blah), the best thing about it is it is cold, thick and creamy, and tastes like a salted Caramel Milkshake. Talk about a win win win! ⠀

Salted Caramel Sweet Potato Superfood Smoothie⠀

1 scoop plant based vanilla protein powder (I used @gardenoflife in this recipe)⠀
1/2 frozen sweet potato⠀
1 tablespoon almond butter (@artisanaorganics is my fave)⠀
1 scoop @vitalproteins collagen peptides⠀
1 teaspoon @navitasorganics Maca powder⠀
1/2 teaspoon Ceylon Cinnamon (@frontiercoop is my go-to)⠀
1/4 teaspoon Himalayan Salt ⠀
2 cups almond milk (@elmhurst1925 is rocking my fridge at the moment)⠀

Blend all ingredients until smooth. Sprinkle with chopped nuts. Pretend its a milkshake. ⠀

Made these chocolate banana 🍌 walnut bites during yesterday’s snow ❄️ day. These little treats are dairy-free, date-sweetened, grain-free, no-bake, and super chocolatey! This was my first time using green banana flour too. Speaking of which, did you know that green bananas and green banana flour are a good source of resistant starch? I like to cook my rice in coconut milk and add some shredded coconut to it too. It almost taste like rice pudding - what I'm trying to convey is it's good AF 👌
