This week I launched my Indonesian Gourmet Menu. The 3rd course is a highlight: Kangaroo Rendang with Indonesian Yellow rice, purple sprouts, edible flowers, pistachio dust and roasted macadamia.

There is a good reason why ...
It. Is. Amazing.
I have been perfecting my version of Rendang for many many years - and have added a fusion twist with the use of kangaroo fillet - slowly simmered in coconut milk with lemongrass, galangal, turmeric, garlic, chilies and ginger. Then left overnight for the flavors to blend.
Kangaroo is such a lean and healthy meat with a slightly gamey flavor that sneaks over the explosion of spice flavors in this dish.
A very complex taste and soooooooo more-ish.

The yellow rice is itself flavored with pandan leaves, coconut milk, turmeric and lemongrass. The nuts add texture and also look great on the plate don't you think ?
Simply. delicious.

Boil the beef in advance til its tender 💟 Blend: shallots, garlic, turmeric, red chillies, corriander, white peppercorns, kefir lime leaves, rendang powder, brown/white sugar, salt, evoo 💟 Mash up: galangal, lemongrass, n leave the bay leaves as a whole. .

Saute all of the seasoning above with some evoo til it smells fragrant, put the beef in (together with the leftover stock), mix well, add some rendang paste, stir to mix 💟 it takes a while for the seasoning to b absorbed (the broth will b automatically reduced), slow cook it. I added some tempe n some coconut milk as the seasoning was reducing. .

Serve it with some hot rice n sliced cucumbers. Yuuummmyy....!!!!

Daging has dalam (potong 20)
Santan kental 1800 cc (3 butir kelapa tua)
Bawang Merah 24 siung (haluskan)
Bawang Putih 10 siung (haluskan)
Cabe Merah Keriting 20 buah (selera msg2)
Kemiri 3 butir (haluskan)
Ketumbar 2 sdt (haluskan)
Lengkuas 2 ruas geprek
Jahe 2 ruas geprek
Daun Kunyit 4 lembar
Daun Salam 3 lembar
Daun Jeruk 4 lembar
Serai 3 batang

Cara memasak :
Panaskan wajan tanpa minyak
Masukan daging dan bumbu halus ke dalam wajan, aduk2 sampai merata dan sedikit keluar air, lalu masukan lengkuas, jahe, serai, dan daun2 aromatherapy, aduk lagi kurang lebih 10 menitan, lalu masukan santan, aduk kembali, kecilkan api, masak kurang lebih 3 jam an (sampai kental).
PS : aduk per 20 menit sekali, ketika sudah mau mengental aduk per 5 menit sekali pelan2 biar daging tdk hancur 😊

✔3/8 pound shallots✔3 cloves garlic✔15 dried red chile peppers5 slices fresh ginger root✔5 lemon grass, ✔chopped2 teaspoons coriander seeds✔2 teaspoons fennel seeds✔2 teaspoons cumin seeds✔1 pinch whole nutmeg✔1 tablespoon vegetable oil✔1 1/4 pounds beef stew meat, cut into ✔1 inch cubes✔1 1/2 tablespoons white sugar✔2 cups shredded coconut5 whole cloves✔1 cinnamon stick✔1 2/3 cups coconut milk✔7/8 cup watersalt to taste

🔴Method:
✔Heat the coconut in a dry wok, stirring continuously until golden brown. ✔Set aside to cool.✔Using a blender, blend the shallots, garlic, chilies, ginger, and lemon grass to a thick paste.✔Grind the coriander, fennel, cumin and nutmeg.✔Using the wok, fry the shallot paste in a little oil for a few minutes. ✔Add the ground coriander, fennel, cumin and nutmeg; cook for 3 to 4 minutes, stirring continuously. ✔Add beef; cook over a medium heat for a further 3 to 4 minutes, or until meat is browned.✔Stir in sugar, coconut, cloves, cinnamon stick, coconut milk , and water.✔ Bring to a boil, lower heat, and simmer until most of the liquid has gone and the meat is tender (about 1 hour). ✔Season with salt to taste. 💠💠💠💠💠💠💠💠💠💠💠💠💠💠💠💠💠

Rendang

Bahan :
1 kg daging, potong2
10 gelas santan dari 3 butir kelapa tua
2 batang serai geprek
2 daun salam sobek
4 daun jeruk sobek
1 daun kunyit
Bumbu halus:
10 bamer
6 baput
15 cabai merah
3 ruas lengkuas
3 ruas jahe
1 biji pala
2 butir kemiri
5 biji cengkeh
Garam
1 cm kunyit

Cara :
1 rebus santan dan masukan bumbu halus beserta daun2.
2. Masukan potongan daging jika santan sudah mengeluarkan aroma
3. Masak terus hingga santan asat
Note : Santan pecah tdk masalah
4. Sajikan dg nasi hangat

Homemade Nasi Rendang Padang.
Bahan:
-500 gr daging sengkel sapi. -2 batang serai, memarkan. -2 lembar daun salam. -10 lembar daun jeruk. -1 lembar daun kunyit. -3 cm lengkuas, memarkan. -500 ml santan kental dari 3 butir kelapa. -2500 ml santan encer dari ampas perasan santan kental.
Bumbu Halus:
-5 butir kemiri, sangrai. -20 cabai merah keriting. -5 cabai merah besar. -16 buah bawang merah. -4 siung bawang putih. -5 cm jahe. -1 sdm ketumbar, sangrai. -1 sdt lada putih. -1 sdm garam. -1/2 sdm gula pasir.
Cara membuat:
1) Campur santan encer, bumbu halus, daun kunyit, daun jeruk, serai, lengkuas & daun salam. aduk rata. tunggu sampai mendidih dengan api kecil sambil diaduk supaya santan tidak pecah.
2) Masukan daging ke rebusan santan. rebus sampai kuah kental & mengering selama 4-6 jam dengan api kecil sambil diaduk sesekali.
3) Masukan santan kental, aduk sampai kuah mengental & berwarna coklat gelap. tiriskan.
