"Zacusca" is the mainly tapas style vegetarian dish in autumn Romania.
Basically it's a stew (but always served cold on toasted good bread) made out of roasted aubergine and red peppers (Ramiro or / and Bell), and then onion, fresh tomato passata, carrots, etc.
It is still homemade on a very large scale in Romania - fortunately - but you can buy it everywhere in the supermarkets, even in some Dublin ones.
Some people use more aubergines in the cooking process, some more red peppers (my style), but nonetheless the final taste should be like a rich, smoked and intense veg stew.
I got recently a few jars from my parents in Romania and next week another 100 jars are expected to arrive in Dublin - they should last till April / May 2019. Happy me.
