【ねばとろ】明太子の和風とろろろオムライス

■材料
・長芋 100g
・明太子 1腹
・めんつゆ 小さじ1
・ご飯 150g
・玉ねぎ 1/4個
・オクラ 1本
・舞茸 30g
・塩 少々
・コショウ 少々
・バター 5g
・卵 2個
・牛乳 大さじ1
・オリーブオイル 小さじ2
・大葉 2枚
・海苔 適量
■手順
1. 長芋をすり、明太子と麺つゆと混ぜる。
2. フライパンにバター、角切りにした玉ねぎを入れ半透明になるまで炒める。1cm角に切った舞茸、輪切りに切ったオクラ、ご飯、塩、胡椒を入れてよく混ぜる。
3. 別のフライパンにオリーブオイル、卵と牛乳を混ぜ合わせた卵液をいれ、箸で軽く混ぜ、薄焼き卵を作る。
4. 皿に2を形を整えておき、その上に3の卵をのせる。1のソースをかけ、千切りにした大葉と海苔をのせる。

Recipe:
Ingredients:
3 ¼ cups or 2 cans (13 oz.) of original whole coconut milk
5 Tbsp. of maple syrup or coconut nectar
1 tsp. of coconut extract
Optional for extra creaminess:
2 Tbsp. of premium coconut cream (Check My IG Story to see which I use)
1 tbsp. organic guar gum powder
How to Make:
1. Chill the can of coconut milk upside down in the freezer for 10-15 minutes. Scoop out the thick coconut milk from the cans (discard the liquid found in the base of the can).
2. Add all the ingredients listed in a high-speed blender or food processor and blend away. Taste and add more syrup for desired sweetness.
3. Pour it into a freezer safe container. Chill in the freezer for 1 hour and then churn according to your ice cream machine instructions.
4. Serve in a cracked coconut and top with fruit: raspberry and kiwifruit.
No ice-cream machine? No Worries!
Every 30 minutes for 2 hours remove the nicecream from the freezer and stir rapidly. Pop it back and repeat until firm. Freeze for at least 6-7 hours. Before serving it, let it thaw at room temp for at least 5 mins. Scoop & Enjoy! #BestofVegan

INGREDIENTS:
210ml Warm Water, 4g Yeast, 376g Bread Mix, 8g Matcha Powder
- Matcha Custard Cream Filling: 1 Egg Yolk, 60g Sugar, 250ml Milk, 10g Flour, 10g Green Tea Powder, 1-2 Drops Vanilla Essence

DIRECTIONS:
1. Mix yeast with warm water, and combine bread mix with matcha then mix all together. Knead well and let it rise for 1 hour in a warm area.
2. In a pot, add egg yolk, sugar, milk, flour and green tea powder. Stir until it thickens, and add vanilla essence. Refrigerate for 2 hours.
3. Divide proofed dough in three then push out the gas. Let it rise in warm place for 30 minutes.
4. Roll out the dough and stuff custard cream and shape it into ball.
5. Place shaped dough into the bread mold and let it stand for 1 hour. Bake in 170 C oven for 25 mins.

Lightened up honey walnut shrimp - tastes just like your favorite takeout dish with less of the guilt. Serve with rice (or cauliflower "rice" for a lower carb option) and some greens! .

This recipe has three parts: the walnuts, the shrimp, and the sauce

For the walnuts - toss the walnuts in a simple syrup (dissolve sugar in water over the stove) and let cool on parchment paper
The shrimp - combine 1 1/2 lb of large or jumbo shrimp (enough to share and still have leftovers the next day!) with cornstarch, garlic powder, salt, and red pepper flakes. Then lightly pan fry with your favorite oil (I used olive oil but coconut oil will work just as well)

The sauce -
1/4 c mayo (you can also use Greek yogurt for an even lighter version!)
1 tbsp honey
1/2 tbsp condensed milk
1 tsp lemon juice
1/2 tsp grated ginger
