#whole30 day 10! Typical lunch consists of berries, almonds and a protein of some kind. Today we’re having #sundaygravy frittata from @nomnompaleo amazing Paleo book #readyornotcookbook and chicharrons for crunch that will last me two days. #paleo

Dinner time! Last week I made @nomnompaleo Asparagus Beef which uses her All purpose stir fry sauce as a base. It only uses about half the stir-fry sauce recipe. So today after putting Silas on the bus I put a bunch of chicken thighs into a container and emptied the rest of the stir-fry sauce on top of them. I put it in the fridge and went about my day. 5 o’clock comes around and I empty the entire contents of the container into a stainless pan, pop it in the oven and let it bake. I found these baby zucchini for ridiculously cheap and couldn’t resist. I added garlic and olive oil and into the over they went right next to the chicken. Sautéed shiitakes and onions, because onions are Silas’ favorite! It was all pretty easy. Also I did the mushrooms and onions, put them in a bowl with foil, and used that same pan to roast my zucchini. I highly recommend having pans that go from stove top to oven! It’s a life saver! We’re sitting down to dinner and I am struggling to deal with the lighting in my kitchen for this picture and Silas says “mommy I need to take a picture of my food!” Pleas enjoy his food pic debut! #whole30 #whole30family #nomnompaleo #readyornotcookbook

I have been super bored with my weekly menu rotation. Plus they haven't come up with a new protein that I'm willing to eat... unicorn....I will try unicorn...anywho, I broke out my Ready or Not and feel inspired again. Y'all, yesterday was totally Day 30 of my #whole30 but I couldn't hardly process it because of the whirl wind of a week it's been so far!

First day of 2nd grade & all day Kindergarten for my 2 oldest, THEN first day of school EVER for my youngest yesterday!!!
.
It was a rushed morning yesterday. 4:30am wake-up, 5:30am workout, run home, make lunches, make breakfast, shower, brush the girls' hair, make sure everyone has everything they need, snap the first day of school pic, drop my baby off at school, rush to drop my older 2 off at their school then head to my 9:15 hair appt.

I was sitting there (alone) in my thoughts for the first time about sending my baby girl off to school when I got to my appointment. Y'all, to be honest, I've been looking forward to this day SO much...during those crazy long and exhausting years of them all so young, with me to tend to their every need. When I dropped my oldest off on HIS first day of Pre-K (4 years ago), I had an 18 month old and a newborn. 😳 I was spent. It was still emotional to see him growing up, but it was a MUCH welcomed reprieve from the logistics of daily life.

Yesterday came. All my babes in school. And ALL the emotions are happening! Excited. Sad. Thankful. Grateful. Overwhelmed. Any other mommas out there sorting through ALLLLL the #backtoschoolfeels too??

Oh, so I made my favorite dinner the other night too. 😜 Thai Roast Chicken (which wins MY award for easiest yummiest chicken recipe) and Mango Cabbage Slaw (Which has SO many of my faves. Mango, jalapeno, mint, lime, oh my 😍) and both recipes are from @readyornotcookbook by @nomnompaleo

I tried TWO new recipes tonight and they were amazing!! I made the Chimichurri chicken wings from the #goodfoodcookbook and the Roasted Cauliflower with nutty Dijon vinaigrette from the #readyornotcookbook 😍 and my kids ATE THE SAME DINNER AS US🙌🙌🙌 My mom heart is full tonight☺️ #septemberwhole30 #eatgoodfeelgood #whole30 @nomnompaleo @thewholesmiths

Once I saw @predominantly_paleo ‘s recipe for Caulifritters with General Tso’s Sauce, I knew I HAD to make it for #thehubs AND BOY did they deliver! Crispy. Spicy. Warm and Saucy. Little #mouthfulsofhappiness

But I had to #sneakinsomeveggies and I had a steak that needed to be cooked. @nomnompaleo and #readyornotcookbook to the rescue! Asparagus beef went beautifully with the caulifritters!

These were the first 2 recipes I tackled from this book about a year ago, and let me tell ya, they are still my favorites and honestly worth the price of the entire book. NOT kidding.
The chicken is super easy, using ingredients I usually have on hand (always a bonus!). Coconut milk, curry paste, fish sauce, lime zest/juice, salt. Done. 🙌 The flavor is terrific! I'm planning to prep the chicken tonight so that it can marinate for 24 hours for my Day 9 #whole30 dinner tomorrow night.

Ok, now we need to chat about that slaw. You guys. It's slaw heaven. Cabbage, mango, jalapeno, mint, lime, shallot. This flavor combo is so stinkin' fantastic. I can't stop thinking about it. 💛🙌

The Thai basil in our garden was huge after lots of rain and heat so far this year. I decided that a curry was in order! This Curry in a Hurry from @nomnompaleo was incredible. The boys were skeptical at first, but quickly finished their bowls! I doubled the recipe so that we would have leftovers and added peas along brown rice cooked in chicken stock in my @instantpotofficial because the boys ❤️ them. #paleo #recipes #readyornotcookbook
