The process of racking in three pictures. Racking is a winemaking operation of removing clear wine from the sediment in the bottom of a tank or barrel after the fermentation. 1. Pumping the “clear“ new wine from the lees into another empty container. Tanks or barrels often have an extra opening as seen in the picture for this process. 2. Getting carefully the rest out of the tank. Depending on what product you want in the end, you get the possibility to pump some lees on the top sediment into the wine as well to get an reductive effect and it also has the ability to bind negative compounds in the wine as well. For red wine, racking, as it's seen here, provides aeration which is essential for the formation of pigmented tannins. 3. Clean up the mess and get the tank ready for the next load.
