crispy BLACK BEAN FALAFEL bowls for lunch with @Rachlmansfield, heyooo๐Ÿ˜Ž๐Ÿ™Œ๐Ÿป๐Ÿฅ™
put a little twist on the usual falafel with these chickpea-less falafels! they're gluten-free, vegan and so easy to make๐Ÿ‘Œ๐Ÿปplus they add that crispy crunchy falafel you crave without being deep fried๐Ÿ™„paired with @bluemooseofboulder black bean + lime HUMMUS and a few of my other favs to make this mexi-meets-greek meal complete!

I have been on such a baking kick ๐Ÿช๐Ÿž cookies, breads, balls {new ball recipe coming soon}.. you name it. Last night I whipped up @rachlmansfield vegan doughy cookies which NEVER disappoint. Bake them for around 8 minutes for an extra soft cookie with melty chocolate. YES PLEASE ๐Ÿซ๐Ÿช first full week of school in the books - this week FLEW!

When it pours all day Saturday so you bake a @rachlmansfield recipe but use the wrong kind of oats and severely overestimate the capacity of your food processor but it turns out okay anyway and then you get home late on Monday and decide to eat dark chocolate peanut butter cup bars for dinner so all is right in the world.
