Italian Monday! Grilled Arctic Char with a creamy fennel and leek risotto and lemon oil! The Italians know their shit for sure!
Fry leeks, fennel and shallots in olive oil for a few minutes, add risotto rice and let it fry for a few minutes as well. Add white wine and let it soak in, turn the heat down and add chicken broth and stir, let it soak in and add more stock, repeat until the rice is cooked. Add a great nub of butter and cheese, in this case I use Västerhavsost but Parmesan is the classic of course! Grill the char and top with lemon oil!
