Quinoa is a healthy substitute for rice, even brown rice. The reason? It’s higher in protein and a complete protein source, meaning it contains all the amino acids your body needs and must get from dietary sources. Few plant proteins, other than amaranth and soy, meet these criteria.
Quinoa is also a better source of fiber, magnesium, and folate than is brown rice. I prep quinoa in the pressure cooker and use it in salads ad as a side dish. As you can see in the photo, it’s a good way to boost the protein content of a salad.
Other ways to put quinoa to work for you: add it to soups, stews, and make plant-based quinoa burgers while you’re at it. I’ve even seen recipes for quinoa desserts. Now, that’s an interesting way to enjoy this “whole grain” that’s actually a seed.
