Here it has been a rainy, foggy weekend☔️ but the only workout that I wanted to do was walking🚶🏽‍♀️ So I decided to go for a long walk in the nature and OMG😱 I think I fell in LoVe all over again with Chicago😍 Such a pretty city! You can enjoy it on my insta stories🌸🌺We can always always see flowers everywhere at any moment🙏☺️
Now I'm off to prepare the dinner and I'm about to try wild rice for the very first time😮 Can't wait for it. Have you ever tried it? If yes, any wild rice combo recommendations?

Crispy & Crunchy Potato Fritters 😍🌱✨ These are quickly becoming my favourite way to have potatoes 🙊 Have you tried them?

I grew up eating these as a little kid back at home in Austria - they're traditionally called "Kartoffelpuffer" and I always got them at the Christmas markets 😋

Seared Scallops Sunday.. it's a thing {for today atleast} with the freshest scallops EVER from @oceanboxofficial 🌊 their promise relies on "from dock to door" freshness which is evident in the quality of their products. They have a wide variety of seafood to choose from on their website! This was such a great weekend filled with friends & new experiences. So looking forward to a busy but great week too!

Lemon Pepper Seared Scallops 👉🏽 marinate scallops {1/2 lemon juice + sea salt + black pepper + cumin + parsley} then heat @lodgecastiron with @fourthandheart ghee. Once very hot, sear on each side for about 3 minutes. I paired mine with a @earthlychoice quinoa + veggie pilaf 🍽

Rich Chocolate Quinoa Bundt Cake. So when Lorraine @notquitenigella said "Stop Everything And Make This Chocolate Quinoa Cake!", she meant business. I still remember the tweet from a couple of years ago, a mental bookmarking and then life carried on. So when I made quinoa from @olivetreetrading the other day, I made sure I had extra. Th​a​t cake had lived in my head for far too long. Time it stepped out, today was the day, and boy, WHAT A CAKE!

I adapted it minimally from a recipe on her blog, one I've known from the years spent being a 'Daring Baker'. Turned out to be the moistest, most delicious cake ever. Amazing if I may add. A drizzle of ganache, a crown of fresh mulberries {don't ask me how they survived in my fridge for 3 weeks, but they did & beautifully}

Guten Morgen ihr lieben🌞, für einen sonnigen Feiertag haben wir das perfekte Frühstück😋
❤Overnight-Quinoa mit Früchten und Schoko-Topping🍓
Wie startet ihr am liebsten in den Tag?


45 g HOLO Quinoa-Flocken
10 bis 15 g Lihn Zartbitter-Kuvertüre
2 bis 3 TL HOLO Leinsaat, fein aufgebrochen
100 bis 125 g Erdbeeren
150 g Sojajoghurt
2 EL Zitronensaft
1 Msp. gem. Bourbon-Vanille
1 mittelgroße Banane
1 bis 2 EL Lihn Agaven- oder Birnendicksaft

40 g Quinoa-Flocken mit 60 ml kaltem Wasser verrühren und zugedeckt über Nacht (oder mind. für 2 Std.) in den Kühlschrank stellen.
Kuvertüre mit einem Sparschäler in Locken hobeln und mit den restlichen Quinoa-Flocken und 1 TL Leinsaat mischen.
Erdbeeren waschen, putzen und in Stücke schneiden.
Sojajoghurt, Zitronensaft, restliche Leinsaat und Vanille mit den eingeweichten Quinoa-Flocken verrühren. Banane mit einer Gabel fein zerdrücken und unterheben. Mit Agaven- oder Birnendicksaft abschmecken.
Erst jeweils die Hälfte der Quinoa-Joghurt-Mischung, des Schoko-Toppings und der Erdbeeren in das Transportgefäß einschichten, dann die Schichtung mit der anderen Hälfte wiederholen.
Tipp: Wenn es mal schnell gehen muss, können die Flocken auch mit heißem Wasser übergossen werden. Sie sind dann bereits nach 5 Min. gequollen.

PSA: Next time you move 🚛🏡 maybe think about transferring your internet service a week before the actual move out date... because now I'm stuck at the new house without internet till Wednesday 🤦🏼‍♀️ .

Guess I'll be coming back to our empty apartment for office hours 😬🤓 ... BUT thinking about the positives and am thankful we don't have to fully move out of our apt yet 👍 LIVE AND LEARN, peeps. (that is our motto this month 😅) .

When the cupboards are bare - quick concentration salad to fuel couple of hours work. Ready prepped quinoa, pine nuts, frozen broad beans, left over salad and Greek feta, which is always in the fridge. Good balsamic, olive oil and done.

Tonight's dinner: a thrown together bowl of various things we had in the fridge! Falafel, spiralised carrots, cooked up quinoa, avocado from our trip down to Tauranga, capsicum, green beans & the best part... home made hummus from @thehappypear cookbook. Simple, yet delicious.
