Good evening. Tonight's dinner is this delicious Quinoa-chickpea salad from @sunbasket with tomatoes and lots of veggies. There are so many flavors going on here like the nuttiness from the almonds the sweet bite from the dried currants and the aromatic sweetness of the mint. Have you ever tried quinoa flakes before? I simmered some with cocoa powder and coconut milk and was pretty impressed with the results 🤗 It's always fun to try new things in the kitchen! I used the @iheartkeenwah toasted flakes for extra flavaa and added some frozen raspberries, coconut, cacao nibs, and half of a massive passionfruit from @miamifruit ✨ Recently I've been loving the raspberry + coconut + passionfruit combo! The added cacao nibs are always a staple though....because 🍫, am I right? 🤷🏻‍♀️

Pro Tip: have been using less liquid to cook my quinoa for fluffier results: the magic number is 1 cup of quinoa to 1 plus 3/4 cup of liquid. For more nutrition: cook your quinoa in bone broth or homemade chicken or veg stock. Major flavor!😋👌🏻

Who knew cake made from QUINOA could be soooo good!? The juices from my probiotic chia jam (recipe posted a few days ago) sunk into the cake to make the flavors bangin'! 🙌🏼And yes, it's paleo (quinoa is a seed not a grain and many people think otherwise) with gut healing benefits of collagen! All my peeps better get on this!👇

Ingredients:
2 cups cooked quinoa (about 1/2 cup uncooked)
3 Tbsp flaxmeal + 8 Tbsp water
1/2 cup unsweetened apple sauce
3/4 cup unsweetened cocoa/cacao powder
2 Tbsp honey or blackstrap molasses
1 tsp baking powder
1 tsp baking soda
2 scoops @vitalproteins collagen

✏️Let quinoa cool after cooking (I cooked it the night before and let cool in the fridge)
✏️Mix flaxmeal and water in a small bowl and let it sit 5-10 minutes to thicken.
✏️Blend quinoa, flax eggs, and apple sauce in a high speed blender (I used my @vitamix) until smooth. Then add remaining ingredients and blend again until it creates a smooth puree.
✏️Transfer batter to choice of baking dish (cake pan, cupcake tins, ramekins, etc.) and bake at 350 F for 30- 45 minutes depending on what type of dish you bake in (the larger the dish the longer it will take to bake - i.e. cupcakes will take the least amount of time)
✏️Carefully slit top of cake, fill with my probiotic jam, then cover with the piece you sliced open and serve.

O komosowych zapiekankach juz wspominalam pare razy, ale mamy lato, wiec przyszedl czas na sezonowa wersje! Banan sprawdza sie w w wypiekach wedlug mnie najlepiej, bo daje duuuzo slodyczy, ale truskawki na cieplo tez bardzo lubie (tylko nie w zupno-kompotowych klimatach, brr 😓). Tradycyjnie: ugotowana komose wymieszalam z mleczkiem kokosowym i slodzidlem (cukrem koko ❤) i ulozylam ja warstwami ma zmiane z pokrojonymi w plasterki truskawkami. Na gorze platki kokosowe z @purerein (kto nie probowal, ten niech nadrabia zaleglosci - platki to zupelnie inna bajka niz wiorki - sa bardzo aromatyczne, miesiste, mokre i smakuja jak raffaello 🙈❤, a upieczone to juz w ogole milosc na maxa!). No i przyszedl ratunek: wegańska odzywka z @womensbest.pl! 😍😍😍
