Lunch today I would consider a success! Fish dippers(minced potato & fish in breadcrumbs) + cilantro lime rice with carrots + peach slices 🍑
He ate all the fish + 1 more, all the rice minus a couple carrot pieces & none of the peach but he did lick it & say it was good 🙃

The kids know this isn’t the real deal (and Austin groaned “not that egg pizza mummy!”) but they both ate it🙌 a good way to serve foods, in a familiar shape.

Homemade kale chips. Another super easy recipe for you! These are so simple to make and WAY less expensive than the kale chips they sell at the store. Plus, you can control the amount of salt/seasoning you put on. Here’s how:

- Wash & dry kale
- Chop into pieces, removing ribs and - stems
- Drizzle with avocado oil & massage with hands to coat evenly
- Roast @ 350 for 12 minutes
- Add salt/seasonings (optional) after they come out of the oven

Because when babe works hard, he deserves to come home to a good home cooked meal 😍😏 Here’s the recipe for my Twisted Shrimp Tacos!


6 shrimp per taco, cooked in the skillet with olive oil & fiesta lime/Cajun seasoning along with chopped sweet orange peppers


Iceberg lettuce in place of tortillas •

Homemade fruit salsa with diced tomato, pineapple, & strawberries. Mixed with cilantro, salt, pepper, basil, garlic, oregano, & lime juice


Topped with a few crunchy tortilla strips •

These were SO flavorful, yummy & filling 😋 I was going to add sliced avocado & a light balsamic glaze on top...but they were perfect & they didn’t need anything else!

Fabulous fish day! I love oriental food and am so pleased with the way this turned out. Tuna steak with prawns and broccoli soup. Its also a great way to replenish your electrolytes and get in your daily bone broth. I personally advocate and love @saykallo organic stock cubes. They come in beef, chicken and veg flavours as well as a low salt version. Here's how to make my soup:
In a large bowl, lay two handfuls of spinach. Steam a portion of broccoli and add to the pile of spinach. In a pan, dissolve half a chicken or veg stock cube in 2 cups of boiled water and set aside. In a frying pan, quickly fry raw king prawns in a little melted butter and garlic powder. Once cooked put prawns into a bowl of soy sauce, red chilli flakes and sesame oil and coat. Then pan fry the tuna steak in a little butter keeping it pink in the middle. Pour the stock over the spinach and broccoli, followed by the prawns and soy mixture. Then the tuna steak and drizzle some fish sauce into the broth. Top with chopped spring onions and sesame seeds. Delishhhh! ♥

✨Pesto, artichoke and sun dried tomato lentil salad ✨

A delicious meat-free dish which only took 20 minutes to make and packed full of fibre and flavour 👌🏻

Ingredients:
240g can of green lentils in water
120g cherry tomatoes
100g cooked artichoke hearts
60g sun dried tomatoes
60g radishes
30g Brazil nuts
1 garlic clove
2tbsp basil pesto (I used @mr_organic vegan pesto)
40g rocket

Simply drain the lentils and throw them into a pan with some olive oil and half the chopped garlic clove

Add the halved cherry tomatoes, chopped sundried tomatoes and artichoke hearts and stir for 5 minutes or so
-
Meanwhile make the dressing by combining the pesto, rest of the chopped garlic clove, chopped Brazil nuts and 1tbsp olive oil. Add to the pan of lentils and stir through. Remove from the heat

Place the rocket on the plate, add the lentils and sprinkle with sliced radishes 👌🏻👌🏻

We've just launched our latest Spice Blend! Our Ethiopian Berbere Spice is packed with flavour from paprika, fiery chillies, warming ginger, coriander, fenugreek and more. It's great for marinades, curries and stews.
To go along with the blend we've got a simple and healthy prawn curry recipe.
Berbere Prawn Curry

Our Berbere Prawn Curry provides a take on Ethiopian cuisine with a kick from the fiery chilli in Berbere. It takes 20 minutes to cook and provides a great source of protein, packed with flavour, offering a wholesome meal. 
Serves 2
Prep Time: 10 minutes
Cook Time: 20 minutes

INGREDIENTS
250-300g King Prawns
1 Onion finely diced
150g Green Beans
400g tinned tomatoes
1/2 tin coconut milk
1 tsp Berbere Spice Blend
Olive Oil
2 Garlic cloves crushed
Handful of fresh coriander
Rice to serve

INSTRUCTIONS
Heat a good glug of oil in a large pan
Add the onion and garlic, soften for around 8 minutes
Stir in the  Berbere Spice Blend
Add the chopped tomatoes and green beans
Cook for a further 5 minutes, you may need to add a little water if the sauce thickens too much
Finally add in the prawns and coconut milk, cook for 5 minutes until the green beans are tender and and sauce has started the thicken
Sprinkle with fresh coriander to serve

SERVING SUGGESTION
Serve with rice.

The #firstdayofschool is tomorrow and I found our lunchboxes in all of our boxes just in time, phew! Isn’t it true what you want is always in the box on the bottom? You know it’s going to be a good year for mom when the kid asks for dinner’s leftover in her #lunchbox to start! In the @yumbox is cheese tortellini, roasted broccoli and red bell pepper plus @natureraised frozen chicken I tried on the fly that I found at @krogerco . I like that the ingredient list was super clean, but frozen and convenient- great for a fast dinner! I tossed it all in a couple tablespoons of basil #pesto from @aldiusa and for dinner it was warm. For lunch it works great as a #pastasalad. @nstomatoes and watermelon are bringing up the side, and a treat of a few mango gummies from @traderjoes 📚 Are your kids already back to school, or is it coming up? 📚
