1 @sizzlefishfit sockeye salmon filet, 1 lemon juiced, 1 Tbsp @sirkensingtons spicy brown mustard, salt + pepper, 1/2 tsp garlic powder, 1/4 tsp smoked paprika, fresh dill. Add everything to salmon, heat cast iron skillet with some @chosenfoods avocado oil and add salmon skin side down and cook a few minutes each side.

Quick and easy vegetable dishes to add to your meals any day of the week. If Iโ€™m pushed for time I keep it simple and have the following as my go-to veggie dishes. -Snow peas and green beans cooked in a pan with spray oil
-Baked tomato, onion, asparagus and capsicum with olive oil, herbs and spices (the capsicum, onion and tomato when cooked together is๐Ÿ‘Œ)
-Mixed leaf salad with onion, tomato and homemade dressing (lemon, olive oil, sea salt, oregano)

You can add protein to each of these or keep it veggie based. When I do I like adding toasted nuts, avocado and tahini or hummus in my salad so that Iโ€™m having adding enough healthy fats for the day๐Ÿ˜‹

Keep it simple, you can always add herbs and spices for flavour ๐Ÿ˜‰

It's been more than a week now that I am trying to eat healthy. This means that most of the meals are home cooked. Limiting the eating out just to weekends. So no weekday binging! ๐Ÿ˜ž๐Ÿ˜ž I must confess it's been a task to fight the 'crave' monster but a week into this and I already feel like a hero ๐Ÿ‘๐Ÿ‘๐Ÿ‘
For dinner yesterday I put together a simple stir-fry recipe that will be ready in 20 mins. I call it the coriander pepper chicken. To prepare this super simple dish you will need the following:
a. 1 onion - finely chopped
b. 1 tomato -finely chopped
c. Boneless chicken cubes: marinated a night before in salt and red chilli powder. I took about 2 handfuls of chicken cubes. It had around 12 to 15 pcs.
d. Ginger garlic paste : 2 tbsp
e. Coriander powder : 2 tbsp heapful
f. Black pepper: freshly cracked
g. Ghee : 2 tbsp
h. Salt to taste
I. Fresh coriander for garnish
j. Half lime for that extra zing
How to prepare:
1. Now because it's eating clean I am using Ghee instead of oil. You can use any kind of oil
2. Heat the pan and add some ghee
3. Sautรฉ onion till they go pink
4. Add ginger garlic paste and saute further till the raw smell goes away
5. Once the raw smell goes away, add the boneless chicken cubes and saute. Do this till the pcs turn white
6. Crack some black pepper and saute further
7. Now add the tomatoes and the coriander powder
8. You can now add salt. I skipped this step as I added enough salt during marination
9. Mix well so that the all the chicken pcs are well coated with the black pepper and coriander powder 10. Cover the pan with a lid and let the chicken cook. Keep checking to avoid any sticking
11. Once done garnish with coriander and squeeze the lime
P.S: if you are feeling creative throw in some kafir lime leaves.

Had to do a quick dinner because my fridge is filling up with all the thanksgiving food preps and yes including the huge bird for the big day. Have you ever made Shrimp gravy? Well this a home grown dish which they call Palabok in the Philippines. What is it made of - Shrimp and tons of garlic. One of the downside of this dish is it uses cornstarch to thicken the gravy so as you mix this with the rice noodles it just breaks down slowly and turns watery. So I have made this in to a non-roux gravy basically and used xanthan gum to hold this thing together and it was wonderful! Yes I know it is weird - gravy on a noodle dish? The color of the gravy usually comes from the head of the shrimp (no shell) but commercially sold ones uses achuete (like saffron) I use both. I have tried using a bit of crab fat too to add that color and taste. Topped with more fried garlic, boiled shrimps and crushed chicharons, smoked dried fish, hard boiled eggs and scallions. Some people add pork meat and squid too. What's for dinner?
I made this healthy meal for dinner and it was so fast and easy! This meal is loaded with fiber, protein, antioxidants, healthy fats, and flavor! -mixed greens with spinach and sliced tomatoes as a base
-a cup of langostino fresh or frozen (thawed) -sliced shallots and chopped garlic -sliced portabella mushrooms -a dab of herbed Neufchรขtel cheese or goat cheese to top off the salad!
-sliced pepperoncini (optional)

Mix with your favorite dressing! I used balsamic vinegar, sea salt, pepper and olive oil.
Some sweet fresh grapes for dessert!

Wasnโ€™t sure what to eat tonight but since I have so many veggies I made this chicken stir fry. Used chicken tenderloins and sliced them so it all cooks faster. Red peppers, orange peppers, broccoli, carrots, radish, ginger, scallions, sesame seeds and added Asian chili sauce, Hoisin sauce, and some Korean red dry pepper flakes. I drizzled some peanut oil. Tastes good. Thought Iโ€™d share the idea. No rice, no noodles. No salt- thereโ€™s enough in the sauces. Put some music and get chopping! ๐ŸŽผ๐Ÿ”ช๐Ÿ’ƒ๐Ÿป๐Ÿฝ
