Not every meal needs to be beautiful and extravagant... Now that swim practice has started, I am constantly hungry and always busy. Lately I have been cooking up some pasta 🍝, rice 🍚, or 🥔🍠along with vegetables 🥦🥒🌶🥗 so that I have a quick, easy and nutritious meal waiting for me when I get home from practice. Since I know that I have something waiting for me at home, I am not tempted to eat out, or grab fast food on the way home.
Making your own meals gives you the control of what you put into it. Less sodium, less unhealthy fats, and you’re getting the correct portions!! Tonight, in between practice and lifeguarding I had:
3 oz brown rice pasta (100% brown rice)
1/2 cup steamed cauliflower
1/2 cup steamed broccoli
1 tbsp vegan butter
Salt & pepper
SO simple, and still SO delicious!
