Today's lunch was a simple & quick one with mint ( home grown) fried rice,onion pomogranate raita,yam fry, instant rasam & sweetened yoghurt or sweet lassi!
The recipe for this simple yet tasty mint fried rice:
1) cook basmati rice with seperated grains.
2)heat 1 tbsp ghee & 1 tsp cooking oil and crackle a tsp of jeera or saunf.I added saunf today.then add 1 bay leaf,4-5 cloves,1 split elaichi, afterwards add 1 tbsp finely chopped garlic ( cloves from one whole garlic),1 tsp finely cut ginger,2 finely chopped green chilles and saute for few minutes to get rid of the raw smell.Now add in 1 tbsp finely cut mint leaves and saute just for few seconds.
4)Keep the flame to the minimum,add in required cooked basmati rice, sprinkle required salt and a tsp ghee.mix well with a thin ladle with out breaking the rice.check for salt & adjust.
5) Transfer the rice to a container & keep it in a pan with water under low flame to be hot till it is served.
( Today a pinch of salt was extra in the rice I made otherwise would have been the best😜)
Moral of the story: Don't be too generous while sprinkling salt😂
