Currently trying my hand at carb cycling...and I was a little scared about going low carb on a few days, but I’m kinda loving it. It’s only been a few days but so far so good.
Today is a low carb day since it’s my rest day from the gym, so I have to be more choosy about my carbs. I love bananas, but I have noticed since being on macros, I will pick oats, bread, berries, or root vegetables over them. I just feel like they don’t provide the volume I need to be satisfied for their numbers. But, I found this no flour banana protein recipe by @willowbirdbaking. They were yummy, and now I felt like their carb numbers for this kind of volume was worth it. The texture and taste of these is like if a pancake and a crepe had a child. Its exterior tastes and feels like a pancake, and it’s middle tastes a little bit like a crepe, making this like a pancrepe. I slightly modified by adding some egg whites instead of a second egg, and added a little cinnamon.
Kept toppings super simple since low carb day. They made 167g. And, I ate all of them. Willow bird baking poured batter into a metal ring to cook pancakes, but I didn’t mind the more rustic (means I was lazy) aesthetic look. Keep second egg if you aren’t feeling stingy with your fats like I was. They aren’t huge pancakes, they are like the size of your fist clenched up. If I wasn’t carb cycling I would double. They were delightful. Super easy and quick. Just a few simple ingredients to whip together.
