Protein Tiramisu! ☕🍰❤ It's so yummy!😊 You need: 6 eggs, 70g spelt flour, 1 pack of backing powder, 30g protein powder, 500g lowfat quark, 1 vanilla bean, backing flavor/aroma rum, espresso and cocoa powder, some sweetener (I used xucker). for the dough: mix 4 egg yolks with xucker until its foamy. Add flour, baking powder and protein and fold in 4 beaten egg whites. Put the mixture on a parchment paper so that you can cut the cake into 2 layers afterwards. Bake 10min at 150°C with circulating air. Meanwhile: Grind the vanilla bean and mix it into the quark together with 2 egg yolks, 1 pinch of rum flavor and some xucker. Fold in 2 beaten egg whites. When the dough is ready: seperate the cake from the parchment paper while its warm. Then wait until its cold and cut it into 2 layers. Take one layer and baste it with some espresso. Put some of the quark-mixture on top, then put the second layer on top and baste it with espresso. Add the rest of the quark-mixture and put cocoa powder on top.
