Something that I get asked a lot is how I can eat healthy all the time, and the truth is, It’s my lifestyle not some fad diet 🤷🏻♀️💯😎. I make sure to constantly create a variety of meals and switch it up so I don’t get bored!
Tonight’s din are some easy tuna cakes with a sautéed kale, apple, and pepita salad.
2 cans @safecatchfoods tuna
1 @vitalfarm egg
1 Tbsp @primalkitchenfoods chipotle lime mayo
1 Tbsp @sirkensingtons spicy brown mustard
1 Tbsp jalapeño
1 tsp capers
1/4 cup red bell peppers diced
1/4 cup diced onion
Handful chopped cilantro
1 tsp garlic powder
1/4 tsp coriander
1/4 tsp turmeric
Salt + pepper to taste
Mix and form into patties. Add to a heated pan with some avocado oil, cook a couple minutes each side, transfer to baking dish and bake 350 for 8-10 minutes.
Served with sautéed kale, sliced apples, pumpkin seeds with some ghee.
