It’s Monday, which means a new week and a new lunch #mealprep to share with my insta friends!
This week I was in the mood for roasting some of my favorite veggies, making a batch of crispy tofu, and coating everything with a yummy green goddess dressing! 🙌🏻
-roasted broccoli and cauliflower
-1 cup cooked tri-color quinoa
-1 bunch of kale or your fav greens
-1 block of tofu
-1 small eggplant
Green goddess dressing 🥑🍃:
2 small avocados
1/2 cup fresh basil
1/2 cup fresh parsley
1/2 tsp minced garlic
1/4 cup olive oil
7 tbsp water
3 tbsp apple cider vinegar
Salt to taste
1 tsp agave nectar
Directions: blend all ingredients in a food processor until smooth. Dressing inspo by @ohsheglows ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the tofu, I drained the tofu and then placed a heavy plate on top for about 2 hours to get all the excess liquid out. I coated the tofu cubes in cornstarch and then placed on a baking sheet lined with parchment paper. Bake at 400 F for 30 minutes. Toss the hot tofu cubes in 1/4 cup buffalo sauce 🔥.
