Company Pot Roast from Ina Garten. This cast iron pot full of comfort food filled the house with dreamola aromas - and the flavor did not disappoint. 🍽🍽🍽
-1 4-5 lb. boneless beef chuck, tied
-Kosher salt, fresh ground black pepper
-Good olive oil
-2 cups chopped carrots
-2 cups chopped onion
-2 cups chopped celery
-2 cups chopped leeks
-5 large garlic cloves, chopped
-2 cups good red wine, like a Burgundy
-2 tbsp cognac or brandy
-1 28 oz. can whole plum tomatoes in purée
-1 cup chicken stock
-1 chicken bouillon cube
-3 branches fresh thyme
-2 branches fresh rosemary
-1 tbsp unsalted butter at room temperature
Preheat oven to 325 degrees
Pat beef dry with a paper towel. Season roast with 1 tsp salt 1.5 tsp pepper. Dredge the whole roast in flour, including sides and ends. In a large Dutch oven, heat 2 tbsp olive oil over medium heat. Sear the roast for 4-5 minutes on each side until nicely browned. Remove roast to a large plate.
Add 2 tbsp olive oil to the Dutch oven, add carrots, celery, onion, leeks, garlic, 1 tbsp salt, 1.5 tsp black pepper and cook over medium heat, stirring occasionally, for 10-15 minutes until tender but not brown. 🥕🌰🍷Add wine and cognac and bring to a boil. Add tomatoes, chicken stock, bouillon cube, 1 tsp salt, 1 tsp pepper.🍅Tie thyme and rosemary 🍃together with kitchen string and add to the pot. Put the roast back in the pot, bring to a boil and cover. Place in the oven for a total cooking time of about 2.5 hours. After 1 hour of cooking time, turn the oven down to 250 degrees to keep the sauce at a simmer.
Remove the roast to a cutting board. Discard the herb bundle. Skim fat off the sauce. Transfer half the sauce into a blender or food processor and purée until smooth. Pour the purée back into the pot, place on stovetop over low heat and return to a light simmer.
Put 2 tbsp butter and flour in a small bowl and mash them together. Stir this into the sauce and simmer for 2 minutes, stirring until thickened. Taste for seasoning. Remove strings from roast, slice the meat. Serve warm with sauce poured over it, and enjoy!👌🏼👌🏼👌🏼
