Potatoes are the unsung heroes of cheap vegan food. In this image alone, I got 40% vitamin B6, 180% vitamin C, 72% potassium, 24% iron, 8% calcium, 13g of protein, 8g of fiber, and all for about 440 calories and 0 cals from fat.
And this is all from regular old russet potatoes. Sweet potatoes are even more nutritious, but man, these guys have been getting a bad reputation as being "empty carbs" for way too long.
Potatoes are not empty, they're not refined, they don't deviate from their original form, they're not processed. And if you want to make them feel even more filling, wrap a lettuce leaf around your wedges. The combination of fibers will fill you up! I ate the whole pan, still not full. and wrapped the last 8 wedges in lettuce, and now I'm stuffed and good to go the rest of the day!
