Dinner last night was rosemary smashed potatoes with sautéed spinach and portobello mushrooms! 🥔 🍄 🍃
Chopped potatoes into small cubes and boiled until fork tender, drained the water and added a drizzle of olive oil, salt, pepper, and fresh minced rosemary. Smashed it up, skins and all! Served alongside spinach and portobello mushroom slices, both sautéed in olive oil, minced garlic, and salt and pepper.
Such a simple and hearty meal. I can't get enough mushrooms, they are sooo delicious! 🤤
