Balance is everything. Im a TRUE believer in that. I avoid certain foods I know i’m sensitive to (gluten 100% of the time because I'm celiac!) but for the most part I never touch dairy. It simply doesn't work with me and I've listened to my body to learn this! . . Im at the beginning of my second week in Portugal and I'm not going to lie... I’ve been eating cheese..and it’s amazing. Yes I might be bloated af.. but its worth it. I love cheese. And I want/am going to have it from time to time! ESPECIALLY when I’m in Europe! Since being diagnosed with celiac disease over a year ago, I’ve worked hard to heal my gut. Particularly in the past 2 months I’ve worked even harder, and the rewards are amazing! I’m drinking wine (after not drinking any alcohol for 6 weeks), and eating CHEESE for the first time in over 2 months. Aside from being bloated, I feel great!! Because I’ve worked to heal my gut, i’m able to eat cheese here and there and not get symptoms like I did before. . . Yesterday I accomplish a life goal, visiting a Porto wine company and seeing the Douro Valley. I’ve visite some of the most beautiful ageing caves in Vila Nova de Gaia, Portugal. It was such an amazing feeling, smelling the wood and Porto wine 😍😍😍.
