Sheet pan roasted veggies! So versatile, easy and yummy! You can even pick up the pre-cut and pre-wash variety at your local grocery store.
To make: dump a bunch of cut and washed veggies in a large bowl. Toss with EVOO, some balsamic vinegar and Italian seasoning. Pour out on a sheet pan and roast for 10-15 minutes in the oven at 425 degrees Fahrenheit.
Add to pasta, or pasta salad, eat as a side dish, use as a topping on a salad or in a pita!
