Back near the first audition where it all started! Messing around with flavours and textures; and I think this was when I realised how much I wanted to try to push what my eventual concept is now today: a twist on really classic Asian flavours.

Twice cooked sticky Pork belly 🐷, gochujang 🌶, mandarin 🍊? Classic Korean inspirations with a middle-Chinese twist.
But what if they met in the middle? What if the pea mash had a good hit of wasabi through it? What if that pork was tender but still had that stickiness and also had a bite? 🤔
