Po’boy | Used to be called an oyster loaf, this famous sandwich came to light during the late 1920s when a strike between the transit company and streetcar drivers.
Brothers Bennie and Clovis Martin who were also former streetcar drivers opened a coffee shop in the French Quarter were feeding the union men throughout the long and bitter strike. Each time a hungry striker headed their way, either of them would say, Here comes another poor boy!”. Thus, the name “Po’boy” started circling around and many variations have been created till date.
