🌯🌮For those that say they don't have time to make yummy vegan food from scratch...I challenge you. I made this in less than 20 min which included time to marinate my "mock taco meat". I didn't measure anything-for the "taco meat". I used about one handful of walnuts, a few mushrooms and some firm tofu and chopped it all together. Then added some soy and Worcester sauce, red chili paste, garlic/onion/chili powders-mixed and set to the side. Then used the same chopper for the onion/cilantro/jalapeño topping. Browned the "taco meat" in the skillet-filled the tortillas and heated some black beans in the same skillet. Add some Diaya cheese and 💣Easy peasy-no animals harmed, no greasy 💩 going in your body and it tastes f*cking delicious. Raw Mock "Chicken Salad" on Romaine with a side of leftover Tahini Dressing (from my Raw-Maine Taco post) 🙌🏻 Absolutely delish and makes quite a bit.
Ingredients:
(for the dressing)
2 cups organic raw cashews
5 tablespoons organic lemon juice (freshly squeezed)
1 clove organic garlic (freshly crushed)
2 - 7 tablespoons purified / filtered water (add only as needed)
1 teaspoon organic dill weed (dried)
1 tablespoon organic green onions (chopped)
1/2 teaspoon Himalayan pink salt
(for the vegetable mixture)
1 organic red bell pepper
1/4 cup organic onion
1 organic carrot
1 cup organic broccoli
1 organic jalapeño
Directions:
(Prepare the vegetable mixture)
Step 1-Put all the ingredients for the vegetable mixture in a food processor and process until it is in small pieces. Set aside.
(Prepare the dressing)
Step 2-Put all the ingredients for the dressing into a Vitamix, or high speed blender, and blend until well combined and creamy.
Start with 2 - 4 tablespoons of water and check the consistency every 15 seconds or so. Keep adding water a tablespoon at a time until it has a creamy consistency and looks like "chicken salad". Try not to add too much water because it will have a thinner texture. Adjust seasonings to your preference.
Step 3-In a medium sized bowl, add the vegetable mixture with the dressing and stir until everything is well combined.

Use in a tortilla, nori wrap, with fresh veggies, dehydrated crackers, heart of romaine lettuce, on top of a salad, etc. Enjoy!

🥕🥒🌶I made 6 of these yummy spring rolls for lunch and I'm stuffed. I used carrot, romaine lettuce, cilantro, radish, bell pepper, cucumber, green onion, red cabbage, black sesame seeds and a sprinkle of crushed nori sheets. I just randomly mixed some things for the dipping sauce as an experiment: tahini, rice vinegar, tamari, and some chili pepper sauce. 🍅🌶🥕I've been wanting to experiment with flavors since hummus is ridiculously versatile. This one is pretty tasty-I ate the whole bowl 😂 : 1 can chickpeas drained and skins removed, 4 sun dried tomatoes, 1 Roma tomato, 1/4 cup tahini, 1/2 of lemon juice, 4 cloves of garlic, 2 TB of olive oil, a chunk of sweet onion, a little cilantro and a healthy dash of chipotle pepper powder. S&P to taste.
