Strawberry Rollups by @flavcity ๐Ÿ’—

Recipe:
flavcity 10 ounces fresh strawberries
1 tablespoon lemon juice
3 tablespoons agave nectar
Blend everything for 1/2 minutes in order to obtain a smooth and creamy puree. Pour the strawberry puree on a parchment paper on a baking sheet and with the help of a spoon level the puree and spread it. You do not want the puree to be too thick and at the same time you do not want to see the parchment paper below.
Bake the strawberries in the oven at 170 F. for 3 hours. Considering the low temperature and the timing youโ€™re not really bakingโ€ฆyouโ€™re dehydrating A quick note. Strawberries might have more or less water: consider the 3 hours like an average timing. You will see that the roll-ups are ready when you will press a finger on the strawberry layer and it will not feel sticky, just a bit tacky and gluey. They will dry up even more once cooled down. Do not over bake or the fruit leather will be too crisp to roll and will break in small pieces.
Remove from the oven, let it cool down and cut it in strips. Roll each stripe and store them in an air tight container in the refrigerator for up to one week/10 days. Enjoy! #veganfoodvideos

Strawberries & Cream Chia Puddings With Pink Poached Pears by @samanthahadadi ๐Ÿ’–

Recipe:
For the vanilla โ€˜creamโ€™ chia pudding
1 cup coconut milk
1/4 cup chia seeds
2 tbsp dairy-free yoghurt of choice
1 tbsp maple syrup (optional โ€“ I omit)
1 tsp vanilla paste

For the strawberry chia pudding โ€“
1 cup coconut milk
1 cup strawberries, hulled
1/4 cup chia seeds
2 tbsp dairy-free yoghurt
1 tbsp maple syrup (optional โ€“ I choose to omit)
1 tsp pitaya powder, to colour (optional)
For the pears โ€“
1 pear, peeled and halved
1 cup frozen berries
1 tsp vanilla paste
1 tsp maple syrup
Fresh berries, granola and banana, to top
Method:
Start by making your chia puddings. For both the strawberry and vanilla puddings, blend the ingredients quickly (making each pudding separately) in a high-speed blender until smooth and creamy. Pour each mixture into its own bowl, then set aside for 15 minutes.
After 15 minutes, stir each chia pudding, before placing in the fridge to thicken overnight.
Once you are almost ready to eat, stir the chia puddings once more, adding a splash more milk or yoghurt, if desired.
Now, you can start making your pears by placing them in a saucepan full of boiling water. Bring to a gentle rolling boil, then add in the frozen berries, vanilla and maple syrup, and reduce the pan to a simmer for 15-20 minutes, or until the pears have softened and coloured pink.
To serve, slice your pears into thin slices (I used a mandolin), then โ€˜stickโ€™ one slice on the inside of each jar or glass you are using to serve. Itโ€™s important that your slices are cut thinly, else they wonโ€™t stick!
Add half of the vanilla chia pudding mixture to the base of each jar, then top with the strawberry mixture. Serve with fresh berries, banana and granola, and eat immediately. Enjoy! #letscookvegan

Seariously guys you can hardly eat too much carbs! A lot of people say that when you eat too much carbs you will gain weight and your body will store fat. But most people don't know that you have to stuff yourself that this will happen. And probably you have to eat white sugar and processed foods.... But as long as you eat a whole food plant based diet... As long as you eat whole plants like potatoes, sweet potatoes, rice, grains, veggies, fruits.... You won't gain weight!
Sure don't forget your greens and the healthy fats ๐Ÿ˜‰ it's all about the right balance ๐Ÿค—โ˜€๏ธ But don't blame the carbs ๐Ÿ˜œโœŒ๐Ÿป your body needs 8-10g carbs per kg body weight per day ๐Ÿ’›๐Ÿ˜‰ ยฐ

I found some tofu rolls, knocking about at the back of the freezer. I had no idea what to do with them, so decided to make canelloni. I'm so glad I did! I sautรฉed onions, peppers, cherry tomatoes, courgettes, aubergines, soya mince and garlic. I then put them on top of the rolls and topped with avocado and poured on enchilada sauce. After 30 mins in the oven, I added some Love Your Heart cheese, and baked again for 15 minutes. I don't like wearing a Lederhosen but I had it before I became Vegan and it wouldn't help throwing it away. So I keep it and wear it on family occasions like the baptism of my niece a week ago. I come from Munich, Bavaria and there it's normal to wear a Lederhosen or Dirndl for special occasions. Just like to share this to show you that I think it's fine to still wear animal products that you got before you turned vegan e.g. a leather couch because it doesn't help to throw it away. Just make more compassionate decisions from now on ๐Ÿฎ๐Ÿ’š enjoy your weekend ๐Ÿ™‚

In an effort to rekindle my love of foodie culture and blogging, as well as wake up my very much dormant sense of self-driven inspiration , I'm
giving the 30-day challenge thing a go--for the next 6 months. My challenges aren't going to focus on the restrictions or physical fitness goals usually associated with the 30-day challenge culture, but rather experiencing and creating new things daily. I'm pretty excited to get started, which is already encouraging because it's the first time in a long while I've been either excited or inspired by/with food.
This first one, #AroundTheWorldIn30Breakfasts, is inspired by a typically 'confused American' comment/observation I made long ago upon my first trip to an international supermarket after noticing there was "no breakfast food aisle", "what do other people eat for breakfast?". Even though I was decently traveled for my age at the time, I was (and still am, tbh) a continental breakfast kind of woman: fruit, some kind of baked good, coffee or tea, small glass of juice, end breakfast. It's extremely easy to travel with such proclivities and miss the answer to my question. Especially if most of your travels are European & North American in nature.
So, during the entire month of June I'll be exploring a cross-section of how different cultures of the world break their fast, and posting any solid recipes I come across or recreate veganized on the blog. If you want to play/pseudo-travel along, the country list follows below. Passport not required. Though wouldn't be fun overkill to make one just for this project? ๐Ÿค” Overachieving is a hard habit to break.
I'll be picking the "destinations" out of a hat each week prior, bc just like with actual travel: too much planning can ruin the whole experience. There are more countries in the mix (44, to be exact) than I'll be able to tackle in 30 days to add to the grab bag effect a bit more. The ones that don't get chosen this time around will likely see their star shine at a later date in round 2. Departure Date: June 1.
