Gluten Free Vegan Pasta Salad 🥗🍅
Always a great main or side dish for weekend get togethers. The weather has been so nice in Sydney, we’re still eating outside ☀️
You can pick up a great range of ingredients and gluten free pasta varieties at @mrvitamins
My sauce uses cauliflower as the base for an extra creamy veggie boost 🥦

GF Vegan Pasta Salad
(Serves 4-6 as a side)
Pasta
Cook 250g dry of your favourite pasta until al dente (Check out the @ceresorganics gluten free range)
Rinse under cold water to stop the cooking process
Sauce
(Makes approx 2 cups)
1/2 large cauliflower (chopped into small florets and steamed until soft)
1 tsp kala namak salt
2 tsp crushed garlic @simplyorganicfoods
1 tsp onion powder @simplyorganicfoods
1-2 Tbsp nutritional yeast flakes (to your taste) @ceresorganics
1 tsp granulated stevia, or natural sweetener @nirvanahealthproducts
2 Tbsp Extra Virgin Olive Oil @the_whole_foodies
2 Tbsp White balsamic vinegar
Blend all ingredients except the olive oil in a high speed blender until smooth
Drizzle in the olive oil to your desired consistency.
Taste, and season further if desired.
Assembly
2 cups chopped coleslaw mix (Cabbage & carrot)
1/4 packed fresh parsley chopped
3 shallots chopped finely
Small handful of cherry tomatoes chopped
Add all ingredients including pasta to a bowl and stir through the sauce until well combined.
Sprinkle with more fresh parsley to serve

Oh my loaded potatoes🤤 This dinn was delicious & SO easy to make! It was a few baked potatoes w raw chopped cauliflower, broccoli, red peppers, onions, carrots, tomatoes, fresh garlic, & a dash of sea salt! I will definitely be making these more often😍

So many of you have messaged me about these peanut butter + choco chip baked oats, so I thought I would share the recipe here... 🍪
Combine:
1/4 cup of rolled oats
1/4 cup of unsweetened vanilla almond milk
1/2 mashed banana
1 tablespoon of natural peanut butter
1/2 tsp of vanilla
1/4 tsp of cinnamon
pinch of sea salt
+ a handful of dairy free mini choco chips in a mixing bowl. Once combined, mix in 1 tsp of baking powder. Scoop half of the mixture into a lightly greased oven-safe ramekin (I used coconut oil), and add a dollop of peanut butter in the middle. Pour the rest of the oat mixture on top and sprinkle with choco chips. Bake at 400 for 15-20 mins! Let cool for 10 mins, and enjoy 😍🤤 Add toppings of your choice (more pb, fresh/frozen fruit, coconut shreds, etc) if you want 🤷🏻‍♀️ You could also add protein powder to this recipe. *Organic errrrrythang, always 🌱

Palestinian zaatar bread... Jordanian style
As a palestinian born and was raised in Jordan I always like to blend the two cultures together even in food ... Today I am sharing with you one of the  recipes for akras zaatar (bread). This bread packs a real flavor punch. It is mixed with green zaatar leaves, onions and sumac. All those beautiful flavors play against a flaky bread canvas.
You see Zaatar in Palestine, grows in the mountains. It is a wild plant that is usually found in the cracks of stone slabs. The wild zaatar plants are strong and defiant. You can cut off all the stems yet as long as you leave the roots in the ground, it will grow back again. Its smell is strong, its taste is peppery, and sharp .
Ingredients
3 cups wholewheat flour
1 cup EVOO
1tsp yeast
1tbsp salt
3tbsp sesame seeds
2 cups shredded clean freshthyme leaves
11/ 2 cup water for the dough
1 finely chopped onion
1tbsp sumac
1 tbsp black seed
Instructions
In a medium size bowl, combine flour, yeast, salt, sugar, and olive oil. Rub the mixture together until oil is well combined into the flour. Add all other ingredients and one cup of warm water gradually while kneading using one hand (add more water if the dough is dry or flour if it is too sticky).Cover the bowel with a plastic bag and place it in a warm place for about 30 to 40 minutes or until doubled in size
Form medium- sized balls (I stuffed them with white NABULSI cheese for extra flavours) and shape them to your desire ... I used this jordanian mold to give them some artisian structure
Bake at 400F till they're golden in color.. bon apetite
