Double Stuffed Cheesy Pasta by @rainbowplantlife 💛

Recipe
24 jumbo shell macaroni
2 cups macaroni shells
1 jar of marinara sauce of choice
1 1/2 cups vegan cheese sauce (recipe below)
Fresh basil for garnish
Preheat oven to 350°F. Cook jumbo shells according to the package directions. Drain and rinse under cold water.
In the same pot, cook macaroni shells according to the package directions and drain.
Mix the drained macaroni shells with the vegan cheese sauce to combine.
Pour 1 cup of marinara sauce onto bottom of 3-quart baking dish.
Using a spoon, stuff the cheesy macaroni into the drained jumbo shells.
Place the stuffed shells on top of marinara sauce in the baking dish. Top with additional marinara sauce as desired.
Cover and bake for 20 minutes. Uncover and bake 15 minutes more or until heated through. Garnish with with fresh basil.
Vegan Cheese Sauce

1 cup raw cashews
1/2 cup red potatoes, steamed & cubed
1/2 cup butternut squash, steamed, peeled & cubed
3 tbsp neutral tasting oil + extra as needed
2 tbsp coconut milk
1/4 cup water + extra as needed
1/2 lemon, juiced
1/2 tbsp white miso
1 heaping tsp salt and black pepper to taste
3 tbsp nutritional yeast
1/2 tsp garlic powder (heaping)
1/2 tsp onion powder (heaping)
1/2 tsp turmeric
1/2 tbsp tapioca starch
Soak cashew for at least 2 hours or overnight.
Combine all ingredients in food processor and blend until smooth and creamy. Add extra water to thin sauce as needed and extra oil to make sauce creamier as needed. Taste for salt and add additional salt as needed.
Heat on stove over medium-high heat until it gets thicker and creamy, and is hot. Add water as needed to thin. #letscookvegan

Sometimes, buffet can be the win for a vegan diet on a press trip. We just finished lunch at #fitgesund17 from @intersport *(PR). Plate one of two filled with veggies, potatoes and grains to be prepared for our next sport class. We asked for some extra vinegar and mustard to prepare our own dressing 😂 there is always help .

Arugula-Mint Sauce
Serves 2
.
Ingredients:
.
•100g arugula
•2 handful Basil leaves
•1 handful mint leaves
•2 cloves of garlic
•1/2 avocado
•200 ml single soya cream
•salt and pepper to taste

Directions:
.
•Add everything but single soya and Salt and pepper to a food processor or blender and blend until smooth
•transfer mixture to a pot and place over medium-low heat
•Add single soya and season with Salt and pepper. Stir well
•cook for about 2-3 minutes or until sauce is warm
•ENJOY!✨✨✨

A lot of people say that quinoa is rich in protein. But, the truth is that it contains just as much protein as grains like Bulgur wheat, rolled oats, and spelt. It only has slightly higher protein than rice and millet. Kamut grain and amaranth actually have much more protein than quinoa.

The one thing that quinoa has going for it is the fact that it is a source of complete protein. Basically it contains all the essential amino acids we need to stay healthy. And just incase you're wondering, essential amino acids are those that our bodies can't make by themselves. They need to be obtained from the food we eat.

I still love quinoa, so I'm not knocking it all. I'm just saying it's protein content is very very overrated. Anyway....my dinner today is this 'full to the brim bowl' 😊 of red quinoa and a lentil and 🍆 stew/curry. I topped it with a dash of coconut cream and lots of fresh parsley 🌱. Needless to say, this meal is #proteinrich 😊

I'm not hung up on protein anymore, I just ensure I get in at least 3 servings of protein rich foods (mainly legumes, occasionally tofu) per day #veganbysomi ❤️

The colour of this juice absolutely blows me away! Rich, deep and vibrant, it's a super powerful cleanser for the gut and intestinal tract.
