Wow it's Monday again. Here in Portugal and Spain it's one of those long weekends where the Tuesday is a holiday so everyone takes today off. Feels like Sunday, so no complaints here. Aaand there's a farmer's market, so we get two market days this week 👏🏻
It's also #avomonday and I'm bringing this simple garden salad sprinkled with sunflower parmesan, a great cheesy, chewy topping to add to almost anything that's totally #plantblased. I make huge jars of it and keep in the fridge for freshness, it's great on 🍝 🍕🌮🍔🍲🍛and it's the perfect crunchy topping for a salad too
🌻Sunflower Parmesan 🌻
1 cup sunflower seeds
1/4 cup hemp seed hearts
4 tablespoons of nutritional yeast
1 teaspoon garlic powder
1 teaspoon sea salt
*optional add in a little dried oregano or thyme for Italian dishes.
Pulse all ingredients in a blender or food processor until a fine grain.
Store in a resealable, clean glass jar in the fridge for up to 1 month (if you're lucky, it never lasts in my house!)
