SPELT FLOUR & BANANA PANCAKES by @veganicer ๐Ÿ’›(Base Recipe)
Ingredients:
200g /7oz spelt flour or any other flour
1 knife tip of vanilla powder / ยผ tsp. vanilla bean extract
2tsp. baking powder
A sprinkle of salt
150ml soy milk
1 banana
5tsp. maple syrup or other sweetener
100ml sparkling water
10ml oil
Optional: cinnamon, cacao powder, fruit, Vegan chocolate

1.Sift the dry ingredients into a bowl, then mix them together. Blend the bananas together with the soy milk.
2.Add the banana/soymilk mixture to the bowl, as well as the water, maple syrup, and oil. Stir until the dough is smooth
3.Put the dough into the fridge for about 30mins, then make your pancakes.

Enjoy them with some maple syrup and/or bananas;) #bestofvegan

Guess who got some jackfruit!!! I deconstructed a little over 13 pounds of it today!

I get a lot of questions regarding how to be vegan while treating thyroid and autoimmune disease. If we don't take into consideration all of my food sensitivities and allergies, it's really quite easy. I focus on avoiding goitrogens (some of these foods can be cooked to get rid of goitrogenic effects, soy is not one of those) and avoiding foods that are inflaming. Meat and dairy are very inflaming foods and cause a lot of stress to your body so being vegan really helps with any issues related to inflammation. I have heard that a lot of people with thyroid conditions avoid gluten (which I do) because it can be so upsetting. The reason why eating gluten can be an issue for people with compromised thyroid function is because many of the chemicals we need to function are created in our gut. So if gluten (or any other foods) are causing distress to our gut, our thyroids (and other important organs) won't get the chemicals they need, and we will feel awful all around. I am allergic to wheat and sensitive to many gluten containing grains and I feel better not eating them. But if gluten doesn't bother you then there is no reason to cut it out. I try to eat with a goal to make my stomach, muscles, and joints feel their best. Hydration definitely helps my muscles and joints but I've found that cooked starchy foods mixed with raw greens make my stomach feel the best. The way I eat can be very frustrating (due to my specific restrictions) but you don't have to eat the exact way I do. You might thrive on more fruit where as I thrive on more greens. You may feel better eating mostly raw or mostly cooked where as I feel best eating a combination of both. So in short, if you have a compromised thyroid, the best advice I can give to you is to avoid goitrogens (or cook out that property) and to avoid inflaming foods. From there you can customize your diet to maximize health ๐Ÿ’š
