West African Peanut Stew with Tofu by @afrovitalityeats 💛

Serves 4
One 16 oz tofu block.
Tofu was diced into 1 inch cubes and seasoned with 1/2 tsp each onion powder, garlic powder, black pepper, spice mix, salt and 1 Tbsp olive oil. This was then baked at 425F for 20 minutes until brown and crispy.

INGREDIENTS •1 cup  roasted peanuts
•2 Roma Tomatoes diced ( About a cup and a half)
•1/2 medium onion, 1/2 sliced (1/2 to be blended)
•1/2 inch cube ginger
•3 cloves  garlic
•1 medium harbanero
•1 sprig Parsley
•3 basil leaves
•2 cups water
•2 Tbsp oil •salt/ pepper to taste

INSTRUCTIONS

1)Heat oil in a medium sauce pan. Sauté sliced onions for about 2 minutes. Add in tomatoes and cook for another 5 minutes
2)Blend peanuts into a smooth paste. Add 1/2 cup of water, mix well until creamy. Add into pan, with 2 additional cups of water.
3)Bring to a gentle simmer and cook for about 20 minutes until foam clears from the surface, stir occasionally.
4)Blend basil , parsley, ginger, garlic , onions and harbanero. Add into skillet and continue to cook for about 5 to 7 more minutes. (You can add tofu now, or serve it over sauce)
5)Season to taste and serve over rice. #bestofvegan

Albóndigas de berenjena en salsa pomodoro, deliciosas!! Para las albóndigas: Agregar a una olla grande y caliente aceite de oliva y 5 dientes de ajo picados y revolver por 1 minuto. Añadir 8 tazas de berenjenas picadas en cuadros (entre 3 y 4 berenjenas) y 1/4 taza de agua. Tapar la olla, bajar el fuego y cocinar por 20 minutos, revolviendo ocasionalmente. Mientras tanto, mezclar en un bowl grande 1 taza de queso finesse rallado, 4 huevos grandes batidos, 1 taza de miga de pan o una mezcla de harina de avena y hojuelas (yo use avena), 1/2 taza de perejil liso picado, 1/2 taza de albahaca picada , sal y pimienta. Una vez las berenjenas están listas, procesarlas sin que se hagan completamente puré. Añadir la berenjena a la mezcla, darle forma a las albóndigas (salen 16 aprox) y hornear durante 35 minutos aprox. a 350 F. - Eggplant “no-meat balls” in pomodoro sauce. For the meatballs: Add to a large, hot pot olive oil and 5 minced garlic cloves and stir for 1 minute. Add 8 cups chopped eggplants (3 to 4 eggplants) and 1/4 cup water. Cover the pot, lower the heat and cook for 20 minutes, stirring occasionally. Meanwhile, mix in large bowl 1 cup grated low-fat mozarella, 4 large eggs, 1 cup bread crumbs or a mixture of rolled oats and oat flour (I used oats), 1/2 cup chopped parsley, 1/2 cup chopped basil, salt and pepper. Once the eggplants are ready, process them without being completely mashed. Add the eggplant to the mixture, shape the no- meatballs (6 approx) and bake for about 35 minutes at 350 F. Dinner was pan steamed (stir fry with broth) vegetables over brown rice...it was so good. I threw all sorts in there. I love the many colors. It makes me feel strong and happy to prepare such amazing fuel for my body. Take care of it...it's the only body you get in this life.

We earned our free $9.00 from @veggiegrill rewards, so it was time for a good meal! We tried the summer menu BBQ plate and the fish tacos. The BBQ plate was great. If Veggie Grill knows how to do something, it's vegan chick'n! Everything else great but I thought that the beans would be baked beans, makes sense right? There were just lightly seasoned chili beans.... meh. The fish tacos were good, but honestly not too flavorful. I had high hopes for these babies, but they might be my least favorite menu item I've tried 😕 There's so much good stuff to pick from though, so I'll be back! #veggiegrill
