Been loving plantains lately in place of other starches like potatoes and squash. They feel lighter and less heavy as the weather warms and spring the time is all about lightening the load!
To make these, use ripe plantains (spotted brown rather than green. Then, heat some butter in a skillet on medium until it sizzles while you cut your plantains into rounds. Place them in the skillet for 1-2 minutes each side and sprinkle some cinnamon + honey on em. Voila!
